    What is the vegetable that you wouldn't want to do Atkins without? How do you prepare it?

    All the vegetables on the list!! lol
    Yeah, I know that's not helpful, but I love all vegetables and always have.
    I do really enjoy mashed cauliflower with butter and cheese though.
    I like to coat it in olive oil and roast it till it's almost black.
    I like zucchini cut into long thin 'noodle' strips and I use that as noodles.
    I also like zucchini sliced into very thin rounds and I use those as lasagne noodles.
    Mushroomsmushroomsmushrooms!!! Sauteed in garlic, butter and dill!!

    I could go on and on and on...

      I am with Mooch I can not pick one!!! I love vegetables....some days it is artichokes, some fresh green beans, then there is spinach, jicama, cukes ...omg I can not choose....it is the one that makes it on to my plate or is in season or looks particularily good at the market...red bell peppers......oh wait fennel....and then there is celery....oh yeah there is diakon ....hmmmmm where is that list ....I can tell you a few I can do with out that would be easier!!!

        MUSHROOMS!!!! I eat them with almost everything! They are so versatile and yummy.

          I love cucumbers, just a touch of salt and yummy!!! I also like mushrooms fried with my steak or burger, they taste so GOOD that way!!! I love iceburg lettuce, so that has been a great friend to me. I also love broccoli with butter and cheese. I want to try that mashed cauliflower, that sounds yummy!!!!! There are lots of great veggies out there, just open your mind and your mouth!!!!
          What would we do without it?

              radishes. I eat them daily. raw. I've always liked them... now, they are a staple to my life.

                zucchini, mushrooms, asparagus, there are sooo many yummy ones!!!!!! Most of the time I like to sautee in a bit of olive oil, or I will steam them on the stove

                  Oh my god... vegetables... vegetables are the best. Don't get me wrong, I love a good steak, but veggies light up my life.


                  Favorites are cauliflower, mushrooms, and chile peppers. I love tomatoes to death but I guess they are technically fruits.
                  No stats. Not weighing anymore ever. Will post "before and after" pictures when I want to. The end.

                    oh definately radish
                    i just eat it raw..whnever i need something to munch i have a piece of radish,and i like the crunch that is lacking these days.

                      I love all the vegetables but right now I can't get enough asparagus. I coat them with a little olive oil, salt and pepper and I wrap bunches in a strip of bacon. I then bake them in the oven at 400 degrees for about 10 to 15 minutes.

                        My mainstays are cauliflower (not mashed, since that's usually too much work for my schedule, but steamed with cheddar cheese and sour cream on top), broccoli, ands squash. But my two new favorites are brussel sprouts drizzled with olive oil and salt and pepper roasted in the oven, and ttdriver's scalloped turnips. YUM!!!!

                              HERE YA GO!!

                              My scalloped turnips!!

                              4 turnips, peeled and sliced THIN

                              1/3 cup fresh chopped onion
                              minced green pepper to taste
                              4 oz cream cheese softened
                              1 cup heavy cream
                              4 oz shredded cheddar
                              1/4 cup butter sliced into pats
                              Crumbled bacon (optional)

                              Spray 8x8 pan with Pam. Add sliced turnips, onion, green pepper. Salt and pepper to taste. Add pats of butter. Add cream cheese and pour heavy cream over the top. Sprinkle with cheddar cheese. Bake at 400 for an hour. Top with bacon if desired.

                              DELISH!
