        That sounds too good!!! I never used to like turnips, but I bet they taste delish that way. thanks for sharing!

            mmmmmmmm veggies all these great ideas here ....I am going to try to find a YACON today Megs posted in the Cooking chat...it looks like a yam check it out ...I saw one at el mercado so.....I am going to go get one today...maybe we have something more rooty to try around here? ..I will report back!!!!

              broccoli is my staple veggie........

              broccoli and broccoli sprouts are a daily consumption in my shake after my work out every morning.

                Eggplant. Couldn't survive without it. Cooked any way at all, but parmigiana....yummmmm!

                Having said that, I'm a mamoth veggie eater. Adore them all!

                  I love my vegetables. So it's hard for me to narrow it down to one or two.

                  But from a nutritional point of view, try to eat a leafy green veggie daily (in addition to the standard lettuce): spinach, bok choy, endive, turnip greens, beet greens, broccoli, cabbage, etc. The yellow or orange veggies, like pumpkin and yellow squash are also very good---supplies you with vitamin A.

                  Don't be afraid to experiment with the veggies: Many of us don't like vegetables because we either have never eaten them or have never eaten them cooked/prepared properly. The best thing to do is to go to your library and borrow books on vegetable cookery. So you'll get ideas on how to prepare them.

                  2Big and others will tell you that once you've killed your sweet tooth, you'll be able to taste the natural sweetness of many vegetables.

                    Spagetti Squash!!!!!-- I like all veggies (except beets--ugggh) but I don't think I would be as successful without my lovely spagetti squash. After the normal baking or microwaving I either make-- well spagetti (meat,fresh tomato chopped, fresh red onion chopped, roast garlic, olive oil, and spinich) 00or I saute with olive oil and butter and garlic untill a nice mushy warm mess.--Great now I am salivating and out of spagetti squash.

                      Wow...that's a hard one. I love em all and never have a problem getting my veggies in. I love my salads, so different mixed greens are probably my staples.

                        I love all veggies - but I would have to pick cucumbers. I have them almost every day with my lunch. I dip them in Ranch dressing and they are so good. I like brocc., mushrooms, spaghetti squash, and so many more.......

                          I agree...I can't pick just one. I eat lots of cabbage, asperagus, cauliflower, zucchini, brussel sprouts, broccoli, spinach, greens, and green beans. My love for veggies has made this way of eating extremely easy for me to stay on!!

                              Hard to pick , there are so many! When I first started low carbing , I really missed potatoes. So I included cauliflower or pumpkin with almost every dinner. Cauliflower was steamed, then mashed with garlic/cream/fresh grated nutmeg and black pepper.
                              Pumpkin was cubed,boiled then fried in butter, garlic and parsley.
                              Now I have broccoli or green beans almost every night, both just boiled till tender/crisp.
                              A really yummy way to make the beans is to boil then till tender (approx 5 minutes). While they are boiling, melt a large knob of butter. Fry some almonds or cashews in the butter till golden brown. Pour the nuts and butter over the drained green beans and enjoy. I think it's real name is beans almondine...yum! My children love it when I do the beans this way!
