    Hey all, I was perusing Linda's Low Carb Recipes today and decided to give this a shot. Tuna "Rice" Casserole. Here is the recipe.

    At any rate - This thing came out AWESOME (made it w/o celery cuz i can't stand it). Cheap (about $6 total for ingredients), not too tough to prepare, surprisingly delcious and filling to no end!

    I was amazed at how well cauliflower can susbstitute for potatoes!

      Linda's Low carb is simply the best site for low carb'ers looking for something new to eat. I am not a big fan of Tuna, but I am thinking of doing the recipe with canned chicken instead of tuna. Thanks for the heads up.

        Linda's low carb is definitely an excellent site. I've made several of her dishes and they're both creative and yummy!!

          Agreed! I am no fan of tuna myself. Especially the cheap 40c per can (non albacore) tuna that i used in this one. Somehow though in this recipe the texture of the tuna was awesome though. Totally fantastic.

          Let us know how it comes out with chicken. Oh and by the way I used frozen cauliflower instead of fresh, still came out wonderful.

            That sounds so yummy!!! I think I know what I am having for dinner tomorrow! Thanks for the post.
