Is it okay not to eat if you are not hungry? I have never really been an eater for breakfast and lunch. Usually only ate one meal a day and snacked at night
I do eat eggs and bacon for breakfast but when It comes to lunch I am just not hungry. Is it okay to skip lunch? I am sure as I go on, my hunger will come back since it did in the past.

Dr. Atkins said you should not go more than 6 waking hours without eating. If you aren't hungry after 6 hours, you should eat a small fat-protein snack. What kind of snack? He gave examples of a small snack in the book too: "a few olives, an ounce of cheese, a scoop of tuna salad, a slice of pot roast", etc.

So it depends on your sleep-wake cycle and how you space your meals. I wake up early on weekdays and eat breakfast between at 6:30-7:00 AM. Lunch is at noon and I eat supper between 5:30 to 6:30PM. Sometimes when I get home and I know it will take me a while to cook my meal, I eat an ounce of cheese while I'm cooking dinner.

Typically your hunger won't return, unless you eat something that messes up your blood sugar or you fall out of lipolysis/ketosis.
