from what I know birch sap is made into sugar syrup then brewed into a nonalcoholic beverage but that is the limit about what I know ..it is really tastey actually
I haven't tried nettles yet, but I've eaten 'wild' greens like lambs quarters, orach, poke, chickweed, wood sorrel, etc.---lots of good eatin' to be found in meadows and woods.

Into sugar syrup? I haven't tasted ones like that. Is it good? I know that when I was younger we used to go to a wood and with a special pump we tapped the sap. We did that in the end of the spring, because it's the best time. No, we didn't put anything into the sap. Just poured it into bottles and leaved for some time. The sap is good with lemons etc.
