    LOL yes what are bacon eyes? I could go for a nice tripe and liver crusted bacon eyes wrap please.

      I think what Analog is referring to is what we call "ends" here. The packages of ends are odd shaped pieces. Going to guess the eyes are the lean protions of meat with little fat.
