  • eggs for breakfast

    Hi,

    I was wondering if there are some tasty and easy alternatives to eating eggs for breakfast? I'm in induction , so I can't think of that many breakfast foods that are appropiate for this phase.
    The problem with me is that a heavy and hearthy breakfast makes me sick , I've been sick since Saturday , and I even had to quit doing Atkins due to a lack of food in the house (why is grocery shopping such a difficult task for men ).
    Does anyone maybe have a shake recipe that is ok for induction ? I was also thinking about maybe eating 1 hard boiled egg after waking up and some cucumber and cream cheese about an hour or two later.
    All ideas and opinions are very welcome!

    I have recently started eating ham and philadelphia cheese roll ups for breakfast. The make a lovely refreshing change from, omlettes, or boiled eggs or fried eggs etc etc. I also find it quite light aswell.

    Full fat cream cheese spread on slices of ham and then rolled up and eaten.

    I have since re-gained a bit of weight, but that is soon to be coming off again!

      cucmbers with sour cream

      Not really light meals but, I like to eat chicken salad or quiche for breakfast.

        I usually eat leftovers from dinner.
        No stats. Not weighing anymore ever. Will post "before and after" pictures when I want to. The end.

          Oh, or sometimes I"ll make this, which is really light-tasting. It has eggs in it, but you really just taste the pumpkin. (I got the recipe off a thread on this site somewhere ages ago.)

          Wintertime pumpkin breakfast casserole:

          2 eggs, slightly beaten
          1/4 cup pumpkin (canned)
          3 tablespoons heavy cream
          dash splenda or flavored syrup (caramel is good)
          1 tablespoon pumpkin pie spice.

          Mix ingredients and pour into a cereal bowl (can also be mixed in the cereal bowl if you are like me and hate wasting dishes)

          Place bowl in microwave for 3 minutes. Serve hot. May add cream if you like.
          No stats. Not weighing anymore ever. Will post "before and after" pictures when I want to. The end.

            This morning I had chilled cucumber soup and some leftover meatballs for breakfast.

              Anything goes...remember, it doesn't have to be breakfast food. I am having quite a bit of success eating several smaller meals a day, as I am not too keen on a huge breakfast, either. Rich's idea is one that I am stealing...I eat chicken breast for breakfast alot (I just bake a batch at the beginning of the week. I also keep that microwavable, pre-cooked bacon on hand if I need to run out the door. Good luck!

                Sounds like you're getting some excellent advice from the crew... I'm just popping my 2 cents in to second the notion that once you stop looking at meals in terms of "breakfast, lunch & dinner", you will be much more open to a varied menu ANYTIME!!! It took me awhile to adapt to this idea, (and hubby has given me more than one grimmace around the breakfast table) but I find the freedom to have meatballs in the morning to be a special privelege!

                  I love eggs for breakfast but sometimes I don't even have 2 mintues in the morning to make them. So I usually eat not breakfast foods in the morning. This morning I had leftover hamburger and cabbage cooked in taco seasoning from last nights dinner. Yesterday I think I had a hard boiled egg and an ounce of cheddar cheese. Monday I think I had leftover meatloaf I made for dinner Sunday night. So anything goes it doesn't have to be just eggs everyday. The meat roll ups with cream cheese are a reallly great snack anytime. I do that alot on the weekends when I'm running around the house doing chores and don't really have time to stop and make something. I make them with turkey and ham both. You can even add green chilies to the cream cheese or garlic or chives for a little added flavor.

                    Eggs got boring for me ealy on, too. But now, the concept of eating revolves more about the number of meals eaten, how long since the last meal, and what's in the kitchen than the age-old standard breakfast, lunch dinner menu options as you'd be offered at a B&B.

                    If there's ten-fifteen minutes in the am, I can whip up my dinner in a skillet, eat 2 or 3 bites, grab my lunch if it isn't already in the office, and head out the door.

                    If there's not enough time, I grab a few bites of whatever fat &/or meat is within easy reach, & lunch to go if needed. That can be jerky, leftovers, cheese, HB egg, even some meat out of a can.

                    On weekends, I try to do up a big batch of sausage & bacon, thet get worked away during the week as well as that morning with my son, and prepare other menu items as well to pack & freeze, stock up at the office, or re-stock the fridge at home with RTE's for both of us.

                          Thanks for all the ideas , can't wait to try the pumpkin recipe. But the ham with Philly cream cheese sounded greta as well. I just can't figure out which ham to choose , they all seem to have some form of sugar in them.
                          I took me a few months (literally) to finally find a brand of bacon that doesn't have any sugar in it and then I still have to put up with some nitrates.

                            LOL, well I'm not much help because I had eggs for breakfast this morning but when I did go without them for like 3 months. I got totally burnt out and am just now enjoying them again.

                            Last night I had "breakfast" food for dinner though so maybe you can make that.

                            I had 2big's mock danish. OMG, it was deeeeeeelicious!!!

                            3 ounces cream cheese
                            2 tbsp. flax meal
                            1 egg
                            1 packet of splenda
                            1 teaspoon of cinnamon

                            ok, take cream cheese at room temp and add splenda and cinnamon, lay some of it aside to use as "frosting". The other part of the cc mix put in a bowl with egg and flax meal, mix with fork. Microwave for 2 minutes, it'll get bready. take it out of the bowl and put on a plate add the frosting on top, it's really hot so watch that you don't burn yourself but it is so yummy.

                            In fact I went to whole foods last night and was salivating over the danishes so i knew it was time to go home and make myself one of those lc, atkin friendly ones. It was so delicious and exactly what I wanted at the time, totally hit the spot.
