    There are a bunch that my local market doesn't stock. I was thinking of getting myself over to the nearest whole foods store to see if I can find any of the more exotic veggies on that list.

    The other problem I have is that I have no clue how to prepare some of those veggies. What exactly is a jimaica (sp?) and how do you cook it??? It's the same with stuff like the squashes, etc. My mother wasn't exactly the most adventurous in the kitchen and I never really learned to cook anything other than Italian. If it isn't breaded and deep fried then covered in cheese, I have no clue how to cook it.

    I'm learning though. I use my family as guinea pigs--hahaha. Poor people. ;-)

      Ditto, Elizellen, you don't find them in Oz either. And aragula had me puzzled for a l-o-n-g time until I found out it's just the weird name those north Americans gave to rocket.

      And is sauerkraut actually a vegetable - I thought it was a German dish made with vegetables.

      My all time favourite is fennel - I love it! I'll eat the bulb part cooked with almost anything, the leafy sprigs with fish and salads and I use the seeds extensively for all cooking. If I have no real fennel a good pinch of fennel seeds goes in every stir fry.

        don't cook jicama the first time you try it you have to try it raw just slice it and eat it it ...they should be smooth and even tan color ..go look in the cooking chat there are tons of ways to prepare it ..but your first efforts should be to just take the peal off and slice it and taste it!!!
        personally I love it with lime and green chile and second I love peanut butter on it .. I love when people ask about vegetables

            Sauerkraut is just a name for fermented cabbage. It is not a unique vegetable unto itself.

                    How do you prepare it? I tried roasting it. I tried making mashed potatoes out of it. It was OK, not great.

                      I like slivered up and dressed with olive oil, vinegar salt and pepper
                      also it is good cooked in soup

                      you can do anything with it but I like it raw best

                        I'll have to try it raw. Now that I figured out how to use my mandoline. It actually works if you use it properly. Amazing, right?

                            Okay I just read this thread........it's really a cool idea. I have not tried every single veggie on the list...BUT...I think that it would be an interesting and cool goal for me to do. It will also give me the opportunity to introduce my daughter to some new veggies.

                            Thanks for giving me the idea...I'll print it and keep it in my wallet so each time I go shopping I'll grab one veggie on the list and incorporate it into my meal.

                            (but for the record...since I grew up in Germany...I do and have eaten MOST of them on the list through out my lifetime....so I dont think it'll be THAT difficult for me..at least I hope not...LOL)
