    Re: It's Getting Harder

It totally makes sense! A lot of us on this board have parental issues. And, kudos for trying to help your mother. But, as a word of warning that you already know, don't help her to the point that it hurts you!!

By the way, the day she said you were eating all day? It looks to me like you are 3 meals (pretty standard), even though they were close in time.

If I may be so bold, could you, would you consider just letting her words/actions/thoughts/insinuations roll off your back? I know it's hard (I have SO been there!), but do what you have to do to make yourself happy. Send loving energy mom's way, but don't take on her sucky energy. Again, I know it's hard. I've been in your shoes many many times over the course of my life, with each of my parents! So, I guess I'm speaking from experience?

    Big love,

Thanks Stacy......yeah I know my meals were close in time...it was due to...well...taking mom to Walmart...it was raining all day....dealing with her, my daughter, two big dogs...blah blah blah...you guys know how it goes...LOL. By the time I was able to say "okay everyone stop..i NEED to eat something" it was so late in the day already....but I did my best.
I am DEFINATELY "trying" to let her stuff roll of my back...and yes..easier said than done...LOL. But I'm trying...I have had to say once or twice already "okay mom..I'm not going to argue with you, it's fine"....I've had to just say okay and quietly go to my room and watch tv in there one night....I had to leave and take my daughter to my BF's house for a few hours.....I dont do it in anger or anything...I just nicely say...okay mom and then try to go about my stuff. I really DONT want to argue...so yes...I'm definately trying to do that....but man is that difficult...LOL.
Thank you for the great insight and advice.......I know I'm not the only one out here with problems....I just sometimes find it helpful to vent...its a sort of therapy for me to write things out......

Here's to us all losing the remainder of the weight we want and need to lose!
And here's to you guys that are maintaining...............

A practical solution that requires little will-power:

Buy yourself a bunch of Sobe Lean drinks. They're Splenda fortified and probably taste 'normal' to non-Atkineers but to Erin and I they are SO INCREDIBLY SWEET. You won't be able to make it through more than half a bottle without gagging, your sweet tooth will be satisfied and you won't worry about having to cheat. Just chalk it up as one of your sweetener servings(1 carb) and you're set. Just thinking about drinking one is making my lips pucker and cake cravings(I have these occassionally) go away.

It is a very good strategy to keep some Atkins friendy snacks in your bag, water, too. Then you can pop them out as needed in the moddle of Walmart, in the car, or even as you find yourself drifting towards hot brownies.

I frequently tote jerky, pork skins, celery & cream cheese in a ziplock, hard boiled eggs, or a can of vienna sausages for emergency use or snacks.

ok...let me ask a jerky question since you mentioned it..and i know..probably not the right forum but because it kinda pertains to my issues right now...perhaps itll be okay....

when you guys talk about eating jerky...do you ALL make your own or do you eat any that you can purchase from the store....

i just dont have the time to make it myself and to be honest...i LOVE LOVE LOVE jerky....but the one packet I looked at...it had sugar added to it so I just let it go.

Id love to know what brands any of you might be eating that are store bought and not home made.....

That would be a definate plus for me as well (as far as the mom snacking thing goes and any cravings i may have)....

As for the pork rinds...well...i do eat those in limited quantities...BUT..my mother eats them too and she ate all mine...LOL. So I'll have to stash my pork rinds from her.....

Assuming that you don't eat the pork rinds like a snack(as in the whole rind), you should just crush them all up as soon as you get them and stash them in an air-tight container. They should keep quite well that way for cooking purposes and no one wants to eat pork rind crumbs by themselve...do they?

Can't help you on the jerky except to say that I have yet to find any brand or flavor in the store that isn't cured in sugar.

By the way, Seshena, I was not criticizing you for eating your meals too closely together (I've done this many time) - more like interested that Mom would criticize you when you ate 3 meals!!

I think you're doing great. I hope it helps to know that you're not alone in the Mom-weirdness catagory!

                      Re: It's Getting Harder

Store-bought jerky and meat sticks like slim jims generally do have a very small amount of carbs, which varies a little from brand to brand and among different seasonings they are prepared with. I do make a lot of jerky at home with a food dehydrator, but the others I eat, too, and like if I have a hot dog, I include the carb count.

Pork skins I like best are the hard washpot style, seasoned with cayenne. Be careful not to break your teeth, take your time eating each one. (Mom may not snitch them, either, because they're so hard)

Hmmm...well I have to be honest...I'd rather eat them as a snack....I dont know that I would use them crushed up for cooking purposes....I dont do meat loaf or anything else where one would put bread crumbs in a recipe....well..maybe on top of a veggie casserole I might.....I'll have to think about that.....but I agree, that would be a way for me to guarantee her not eating any of them...LOL. 2lbs of ground beef(lean)
                              1 package of cream cheese
                              2 tsp yellow mustard
                              2 tsp horseraddish
                              garlic powder to taste

                              dehydrated onions to taste

1st combine cream cheese, mustard, and horseraddish, garlic powder, salt and pepper, and dehydrated onions in a mixing bowl. Smooth it all out so when its done it will be a creamy yellow almost like the consistancy of the yolk of deviled eggs. Put aside, and split beef in half. Make a large hamburger patty and put into a round cooking dish(or square if you dont have round). Sprinkle with some salt and pepper and spread cream cheese mixture over the hamburger patty and take the other half of beef and make into another patty. Put on top of the patty with the cream cheese mixture and pinch the sides closed sprinkle with salt and pepper. Bake at 325 for 55 min or until well done. Slice like a pie and enjoy!

I always get a whooshie after eating this!

Which by the way...I didnt like the whooshie pie....I like horseradish so that wasnt the issue....but I didnt get to pinch the sides closed cuz I put it in a square glass baking pan...and as it cooked...the juice from the extra lean beef and the melted cream cheese..it made a big icky watery mess....I cut out one decent sized piece..ate it with a salad and pitched the rest of it in the trash....

Probably the way I fixed it...but...definately not the recipe for me. *sigh*
