Because it's not cheese. Did you know that the long rectangular box it comes in doesn't even have to be refrigerated before it's opened? Anyway, it's a no-no because of the fillers. Try real cheese. It tastes better anyway.
Kelly, I know, I was bummed at first too. I had a couple great recipes that called for Velveeta. Put it off til later, if you have to have it. You may find you won't miss it at all though!

Me too...and I got some Rembrandt brand from Wild Oats and that stuff was so smooth and creamy. Now I'm going to have to go into Tampa tomorrow to get some more. Yum.
