If I get PHO w.o the noodles is that ok?

Never tried noodle-less Pho from a restaurant, myself. But I make it at home without any problems. But your mileage might vary because at home I can avoid the added sugars and things.
Anyhow about MSG. Some people are sensitive to it. Some aren't. So it really depends on how your body reacts to it.
Well, depending on who prepares it, of course... From a recipe I just found, the noodles would be the only ingredient that I could see any big problems with. I also wonder about this Nuoc Mam. In the recipe I found, this sauce is required for pho, but the ingredients for nuoc mam includes sugar, which is not exactly on our "things to do" list. I would ask around, get some more opinions, or try making your own, but using splenda instead of real sugar.
We use splenda on just about everything nowadays...
There is a place here that has the BEST tasting pho I've ever had, hands down. I still go there every now and then and get the soup with double meat and no noodles, and I've had no problems with stalls. Avoid the meatballs/fishballs though, I'm pretty sure those have flour in them.

I do the same thing, double meat, and meat balls no noodles. However I am nixing the meat balls =)
