Anyone know what kind of cheese the cheese dip in many mexican rest. is? It makes a WHITE cheese dip. I can't find the cheese for the life of me!

Title: CHILE CON QUESO
Categories: Appetizers, Dips, Cheese, Mexican
Yield: 1 1/4 cups
1 c Asadero cheese; shredded *
4 oz Jalapenos, chopped;
-drained, OR
4 oz Poblanos, deveined &
-julienned
1/4 c Half & half
2 T Onion; finely chopped
2 ts Cumin, ground
1/2 ts Salt
Heat all ingredients over low heat, stirring constantly,
until the cheese is melted. Serve warm with tostaditas.
(If this is made with julienned poblanos, it's called
"queso con rajas de chile").
I've heard it called "queso blanco", referring to the dip.

It's probably queso asadero, used for queso fundido (melted cheese), and a little less than a carb an ounce just like most full fat cheeses. http://www.mexconnect.com/mex_/recip.../kgqueso1.html Thought this was a pretty good article about Mexican cheeses. Mexican cheeses are becoming more and more readily available in the States, and I've enjoyed bringing samples to my Spanish students as the flavors are unique and varied.

I picked some up the other day at Wal-Mart. I dip pork rinds in it sometimes. Anyway the kind I bought was over around the cream cheese section and where the cold tortilla shells and stuff are. It's called "La Banderita - Authentic Restauraunt Style Cheese Dip." You can get Mild or Hot. It has less than 1 gram carb per tbsp. Hope that helps.
