        Re: Ideas

I make breakfast "muffins" on Sunday night and store in the fridge. DH and I each take 2 for breakfast in the morning - heated in the microwave for approx 45 seconds. I believe that I received this recipe from Starmaker.

        Breakfast Muffins
1 dozen eggs (I usually end up using 10 eggs)
        1 package of breakfast sausage
Shredded cheddar cheese (or cheese of choice)

I spray a muffin pan with Pam spray and preheat the oven to 350. I brown the breakfast sausage like you would ground hamburger. I drain and then fill the muffin tins about 3/4 full, then add shredded cheese to the top of each muffin. Scramble the eggs and pour the liquid over each muffin. Bake for approx. 20 minutes.

I'm a convenience girl, so these muffins really work for us during the week. Sometimes I will use a little salsa on them while eating to kick it up a notch and so that I don't get bored. I also try not to eat them on the weekends - again so that I don't get bored with them.

You could also make egg salad in advance. I boil the eggs, peel, add in some chopped bacon, small amount of mustard, mayo, salt and pepper.

        Good luck!

On induction I made egg cups. brown sausage. put into muffin tins. Add egg to each whole, break yolk. I add onion powder and mushrooms to each tin as well. Bake until eggs are set. THese are great cold or heated up with cheese and will easily keep for a week. (you can substitute the sausage out with bacon, ham, any meat really.)

This morning I had greek yogurt (for the dairy rung) and leftover bbq pork.

            Re: Ideas

            Hi and welcome.

Any food on the Induction Acceptable Foods list is fair game for breakfast. So you never have to limit yourself to eggs and bacon for breakfast---ever.

I typically have leftovers for breakfast---they're already cooked, I just need to pull them out of the refrigerator and eat.

Thanx for the ideas. Keep them coming. My bf is a little unsure of this diet he loves the carbs. But I told him theres so much to eat that its really a good way to lose weight. Hes seeing it won't be too bad with not be super restrictive.

I keep hard boiled eggs around. And sliced pepperoni and american cheese in tupperware containers. I don't know if I'll get yelled at about the pepperoni thing since they have additives as far as I know. There's the nice mental image of me in rush hour traffic trying to eat a whole ham though that I'm in love with... There's cream cheese rolled in lox (if you prepare and grab).
