  • Eggs that don't smell?

    Something that really worked for me in the past was buying the bulk box of Jimmy Dean omeletes. I liked them, and they didn't...well, smell LOL. BJ's Wholesale either stopped selling them or went out of stock...so now I have to pre-make my omelettes again.

    When I cook hard boiled eggs or prepare an omelette overnight, it smells horrible the next day! How come the JD omelettes don't have that icky smell? Is it because they're frozen, or is there some tip anyone can give?

    I think eggs smell more the older they are and the longer they're cooked. Maybe the freezer will work for you...

      For hardboiled eggs, you need to cool them immediately by soaking them in ice water, then gently crack their shells and soak them again in ice water. I read it in some book, that the eggs give off a sulfur compound (also responsible for that weird greenish-grey ring around the egg yolk). In order to get rid of it, you need to provide a way for the sulfur compound to leave the egg---so cooling immediately to stop the cooking and cracking the eggshell to allow the compound to excape does the trick.

      For omelettes, I don't have much of a problem with those smelling, probably because I allow it to cool completely before storing it.

        After I make my omelette tonight, I'm going to freeze it. Hopefully this will work for tomorrow!

          Ah, I tried the ice cube thing, but never knew that cracking the shell helps! No wonder the hard boiled eggs still smelled the next day, LOL
