2big informed me of some updates just this past week about bacon and nitrates. apparently it's not much of an issue any more. let me see if i can find that post. i'll bring it here if i can find it.

Jimmie Jo until recently it was thought that the nitrites in the human body were an inert material and never used so eating nitrates would up this stuff and cause cancer in huge amounts as has been shown in labs but not in humans yet. BUT they have discovered that in low oxygen events like aerobic exercise the muscles nitrite leves dropped, further study has shown that they protect orgasns like brains and hearts during perioods of low availible oxygen as in stokes and heart attacks. Since they are very cheap and readily availible they are looking into medical ways to administer them quickly to folk, Saliva recats with trates to make thin trites so as one scientis working on the project was quoted as saying I want to turn you into a giant hotdog.
