Thanks Joy and jimmie! It was Although I think maybe next time I might try cooking the chayote squash a bit before layering them. Maybe cook down in a bit of the carmel syrup to soften them up, as they were still a bit crunchy when the cake part was done.

I tested the cake (muffin mix) part with a toothpick and it came out clean. Although I found the middle when I cut it still undone. So I nuked it for a couple minutes and it cooked right up and was fine. Although.......I found out my glass plate must not of been microwavable as soon as it hit the air and started cooling it cracked in half. *sigh* Live and learn.

i will promise not to test a new recipe on unsuspecting dinner guests. lol
i will be hosting the supper club in november and that gives me plenty of time to make this.

thanks for the info on the glass plate, too. i don't think i would have thought about that and i have many pretty glass plates. in fact, i think i have one like yours......... minus the crack.
