  • What is for lunch?

    Just finished breakfast but need some ideas for lunch... what are you having???

    I'm having a chicken breast with a bit of tomato sauce and melted mozzerella on top, and a salad ....

      I have since re-gained a bit of weight, but that is soon to be coming off again!

              I had baked chicken, with green beans and salad with blue cheese dressing.

                Had a 'spur of the moment' invitation to lunch from a lady who helps us with tenant changeovers after a morning's work together. She's a farmer's wife and a wonderful cook. This is the lunch she 'just rustled up in a jiffy'

                Egg pasta with sausage and zucchini sauce (I had sauce only).
                Wild boar braised in tomato with junipers (this she got from the freezer)
                Zucchini frittata (she has zucchini in the garden still)
                Salad
                Wild chicory tossed in garlic and chili pepper
                Strawberries
                Wine from their vineyard

                ... and that's pretty normal for here!!! Can y'all imagine what gets put on the table when she has a couple of days to prepare??? I think I'm gonna have one peanut for dinner...just so I can say I ate after six hours!!! Lol.

                My usual lunch is waaaaaaaay more frugal: A big salad with tuna, or chicken, or feta cheese. Flax crackers with cheese or butter. Occasionally, Greek yogurt.

                  I ended up having to grab something quick due to work...

                  Had:
                  1 slice of roast beef
                  4 slices of salami
                  2 celery w/ cream cheese

                  Nothing fancy, but it hit the spot!
