    I called the Atkins Center (not ATKINS NUTRITIONAL) when Doctor Atkins was still running the show. Asked many questions and that is where the egg answer came from.

      I'm glad you told us that, cause I was going to ask you for page and verse myself. LOL. Eggs are about the most perfect Adkins meal cause if you ate a cup of scrambled eggs, there would be like 67% fat, 5% carbs and 27% protein. Thats about as close to a perfect meal.

        FWIW, I had a cracking omlette last night! Onions, mushrooms, ham, boursin, and I even through some plain unsalted peanuts in there just for an experiment. (oh and 3 eggs).

        Very nice, very satisfying. luvvly!

            Not to go against the folks working at the Atkins Center, but I would rather take the word of Dr. A himself, that is unless you are damn sure this info came directly from the man.

            You aren't sure if this idea was the brainchild of the person you talked to who is all for Atkins, but might still be thinking too many eggs can kill you. I'm still not convinced, I'm afraid. And yes, I'm argumentative. My hubby hates it about me!

                How did the peanuts taste in the omlette rich? I can't imagine that Though I have portion control issues with nuts so it's probably in my best interest not to start adding them to my omlettes

                I love Boursin cheese. G-Mom it's kinda similar too whipped cream cheese, though much richer i find (and more expensive too). Here we can get it in herb and garlic and plain.

                  The peanuts were strangely nice. Different than my usual omlette but there you go. I added the nuts at the same time as the onions in an attempt to og them roasted for a little longer than say the same time as the mushrooms.

                          Nuts in an omelette, huh? I just ate my daily omelette...pretty plain today. 2 eggs, butter, and Nature's Seasoning.

                          I need to be more adventurous with what I put in it--what's the best cheese for an omelette? What's your favorite meat to put in?

                            I have tried lots of cheeses, but my favorite is sharp cheddar. I think the best kind of cheese is one with a strong flavor, otherwise it just gets lost in the eggs.

                            I love ham, sausage and bacon, but I have put turkey, and even hamburger in there. There is so much you can do with eggs.

                                I love my Mexican Omelet made with Mexican Chorizo (as opposed to Spanish). Chorizo, a little onion, tomato, cheese.
                                Or a taco omelet with taco seasoned ground round, salsa, cheddar
                                Just bacon and cheese is delicious.
                                I wonder if I could come up with a Japanese Omelet. Maybe smoked salmon
