  • What's your favorite Atkins food creation?

    This is not meant for all the "cooking inclined" ...but for anyone who's created a low carb "concoction"....especially if you think it's odd! Or if it's not odd, feel free to share it as well!

    I melt cheese and pepperoni in the microwave...I call it "fake pizza" ROTFL. But it's quick, easy and I like it. Sometimes I'll add sliced mushrooms out of the jar. Very strange looking though...eating melted cheese right off my plate!

    jc, you're not all that strange. I put dollops of cream cheese on pepperoni and then microwave it. I've also got my DH and DS doing it!!!!

    Easy lunch:
    put whatever you'd have on a sandwich in a lettuce leaf and roll it up.

        I melt (like 2-3 oz) cream cheese in the microwave, then mix in a couple of splenda packets and a bunch of shredded coconut (I have some unsweetened organic stuff that has less than 1 carb per 2 tbsp)... it makes kinda weird little macaroon blobs, but I love them... I've thought about slicing up some almonds and mixing those in too, but haven't gotten around to trying that yet.
        No stats. Not weighing anymore ever. Will post "before and after" pictures when I want to. The end.

          Its funny you mentioned the pizza thing. The other day I needed something to take to work quick so I cut up some turkey slices about a 1/4 inch thick (jennio is the brand i use) and threw some pepperoni and some cheese in a zip lock baggy. When it was time to eat at work I threw a few pieces of pepperoni on the turkey slice and put some cheese on top heated it in the nuker and I swear it tastes just like pepperoni pizza!

                This isn't that odd, but it's an extra special treat that I'll make for those times when the rest of the family is having some yummy dessert that I won't be partaking in. I don't even have it every week, but it stops me from having "one bite" (yeah, whatever) of what they're having.

                I soften about two oz of cream cheese, add a little vanilla, lemon juice and 1 pkt of Splenda, mix it up with one egg and microwave in a little dish for about 2 minutes. It's a bit like lemon cheesecake. It's nice if it's still a bit warm.
