      Heya Jeff - I'm a very picky eater. One thing I've learned from this experience, is how to cook... Uhm, I learned how to not get disgusted from eating green things, and that places they call "fitness centers" or "gyms" really won't attack you. What else? I've learned that I can get mad energy from seemingly nowhere!

        Hi Jeff! Welcome to ADBB!! My best friend has a lot of medical conditions and is doing Atkins. She's had her struggles, but it *IS* helping.

        Anyway, with having to watch your vitamin K as well...you'll have to take that into consideration with all the advice you get here. I would suggest researching all the vegetables, finding the ones you can have and then heading down to the Food and Cooking Chat thread. Give us a list of all the foods you can eat and we'll try to come up with some ways to prepare them for you. Sometimes you'll find that "its all in the preparation" so to speak with your tastebuds.

        We love to take on a challenge in that forum, and if you're willing to do some taste testing we'll hook you right up with some scrumptious foods!!

          Hi Jeff,

          Wow, great choice to decide to try Atkins. Your pickiness could really only be a mind thing. The reason i say this is because Atkins has the ability to resemble tastewise a lot of the foods we "love" that are bad for us. Only our minds say ummm ewwwwwww, but in the end our taste buds say... ahhhhhhhhh familiarity. Unfortunately, your body is making this decision for you with the diabetes. I literally have a 3inch notebook full of over 1000 low carb recipes if not more.

          Here is a comprehensive list of foods that have vit K amounts in them, you can compare the 14 day induction list of foods to this and know exactly what you can and can't eat or how much you can eat of each then it becomes a recipe idea and there are 123273829361932184189483294328 types of recipes.

          And as Joy said above: If you need help figuring out what to make with a couple foods post a question here and people will help you with different recipes.

            I'm just going to post my favorite green been recipe. My Mom made these when I was a kid and have rediscovered them but I use fresh lightly steamed beans my MoM used whole can green beans.
            Ingredients
            Green beans whole
            bacon
            toothpicks
            Cut bacon strips in half wrap the strip around a bundle of green beans sucure with a toothepick- Fry the bacon wrapped bean bundle til the bacon is crisp. Yum.

                      I spoke with my Mom tonight after reading your post. She's been on Coumadin a number of times for DVTs. She said to talk to your Dr. but her Dr. told her if she ate foods high in vitamin K to make sure she ate them daily, so when she was tested her blood levels would be consistent and that's what she would be dosed for. He said do not eat a huge chef salad if she normally wouldn't, then come in and be tested because her dose would be titrated to that. If she wouldn't normally be eating salad, she'd be getting too high a dose. But she stressed the need to talk to your Dr. because as you know it's not anything to mess around with.

                      On the plus side, if you want my experience with Atkins, I'm prediabetic and my blood sugars are always normal now, and I also had GERD very bad. I would take medicine daily for it, and that's gone away totally. All my blood levels are excellent now when they weren't good at all - cholesterol, Triglycerides, blood pressure, etc. I have very recent numbers if you'd like to see befores and afters. Sometimes that's helpful.

                      Also, I googled jicama... that seems to be pretty low in vitamin K (0.3 mcg for 100 grams) and I love the stuff. Maybe you can check Jicama out. When started out I used to sprinkle splenda and cinnamon on it. Eventually discovered I just loved it plain. I know people make fries with it and stuff, but I just love it raw. If I have an Atkins legal food addiction, it's jicama

                        Good to see you posting, Jeff! If green beans are your staple.. well.. there are lots of ways to eat them and enjoy them. I'm eager to hear of your progress. Best part of Atkins is it can be tailored to meet individual needs. Post, read and drink your water. We're all rooting for ya.

                          Mmmmmmm Jicama! That's one of my favorites! I love it raw, on salad, dipped in olive oil and spices, splenda/cinnamon, yumyumyumyummy!
