  • Sooo If you were going to Cook and Freeze

    Soo if you were planning to cook and freeze stuff, what would you make? I am not sure what to freeze and what not too. It would really be great if people had breakfast, snack, lunch and dinner ideas. Especially casserole like thingies. Do quiches freeze well?

    Okay i am majorily showing how much i DON'T know how to cook lol.

    lisa's eggs muffins are like an individual breakfast casserol

    I got one of those vaccuum sealers machines back in the eatly days of Atkins and keep my cooked stuff in them in the frreezer.

      homemade beef jerky is a good option--I don't freeze mine, I just keep it in the fridge...it's really easy to make and it's soooooooooo delish...it's good because you don't have to refrigerate it during the day, like if you went to work, etc.

      Um...I don't really freeze anything...I do like to make hardboiled eggs...like a dozen at a time...those will keep for a week or two I believe, in the fridge...though mine never last more than a week.

        Did you ever see the commercial for those where the guy uses a straw to suck the air out of the bags............. that would be me! lol lol lol

        Saving on food...........$$$$$$$$$$

          Thanks ladies. I am going shopping today get load up on stuff, i went through some of the casserole recipes and they all look like it would be fairly easy to add chopped chicken or beef to them. i will trying the egg muffins too.

          how do you make jerky?

            There's a recipe called "spicy beef jerky" that I posted in the cooking forum...it's really good and pretty easy to make.

              I followed Juli's footsteps and made some jerky... it made it to the fridge... and probably would have lasted longer than 4 days if I hadn't eaten it for breakfast, lunch and dinner.

              I have frozen (and been ok with) Spinach Lasagna, Mashed Cauliflower, Brie Quiche, Hamburgers (with bacon and cheese in them), Thai Meatballs, Chicken w/Cheese in Roasted Red Pepper Sauce... I forget what else... The Chicken Salad from DANDR is really yummy but really *does not* freeze.

                  I don't get home 'til 6.30/7p so I've found if I don't have pre-made food ready I start going for the kid's carbs.

                  Oh, and of course, there's sausage - mmm... sausage... I think it made it to the freezer a couple times.

                    Yes, Quiches freeze just fine. If you look in the stores, you'll see them there, which means it freezes ok. lol. When in doubt, I remember what all I've seen in the stores freezers.

                    One thing I like is the mashed califlower. Which is cooked califlower, butter,pepper, a small tad of salt, and a splash or so of Whipping cream. Then you put it all in a blender or food processor, swirl it around till the chuncks are grinded down and smooth, then eat. I don't like to smash it up by hand, myself, because to me..I like mine smooth. It freezes well.

                    Another thing I've done is to take those plastic, microwavable, plates with the lids (some usually have compartments too) and make my own TV dinner to freeze. When I'm in a hurry, or really really hungry, I can pop that in the micro and VOLIA...a meal in minutes. That also will help ease the urge to eat whatever's in sight. Most of us do tend to wait till the last minute and by then it's usually too hard to control yourself.

                    Also, a crock pot can be your friend. You merely put in the ingrediants, water, and seasonings and when you wake up you have breakfast, lunch, or dinner waiting for you. You can put the meal in storage, clean out the crockpot, and fix another meal for later. The nice thing though about cooking in bulk like that, is that you can freeze it. Put it into small portion sized containers and freeze.

                    A crockpot makes great cooked cabbage. If you keep the cabbage leaves big, then you can used some of the cooked leaves to make a lasagna. Merely make the lasagna stuffing, make sure you make it low carb, then use the cabbage as your noodle. I heard it's quite good.

                    You can find low carb recipes for the crockpot online and there are also some good cookbooks for the lowcarb crockpot at your local book stores.

                      For the smashed cauliflower, I still like the DANDR version better - with a leek to make it more like garlic mashed potatoes.

                      I use crockpot for sausage, corned beef and cabbage (or just corned beef)... but those disappear the quickest. I should go check out crockpot cookbooks.

                        mmmmm...that sounds good. I never heard of using leeks. I'll have to give those a try.
