I wholeheartedly agree with Betty: Fat is your Friend!
There are many studies around too that stress that saturated fat is nowhere near as bad as we've been led to believe... rather, it's heart healthy!

Even the thread on homemade sausage has some good words to say re. bacon, wonderful, tasty bacon:

The only thing bad with bacon is sometimes I get too much salt when I eat too much of it.

Re: feeling guilty about all this bacon!

Eggs are wonderful for you. Most cholesterol disorders (hypercholesterolemia; i.e. high cholesteroL) are familial anyway and are a matter of genetics... or caused by a high-carb, high-fat diet.

Look at it this way: if you are eating more food than you have any business eating, your body will burn the carbs first. If you have waaay too much energy, your body will store the fat leftover (and carbs leftover depending on how badly you are overeating) as body fat and some will prowl around in the blood as elevated blood lipids (HDL cholesterol = high-density lipoprotein; LDL cholesterol = low-density lipoprotein)... but let's say you are eating low-carb and burn your fat for energy rather than having all of it (and some of the carbs) just sit around in your abdominal fat and blood vessels. Well, then you wouldn't have a cholesterol problem (hypercholesterolemia, hypertriglyceridemia, or hyperlipidemia) if it's being burnt. Unless you have a strong genetic disposition -- and in that case, what you eat has little to do with your cholesterol numbers.

The point being: Eggs are good for you. Our body even needs a certain amount of cholesterol to function. Cholesterol is integral to the structure and function of our cell membranes and its existence is crucial to undergoing even the simplest of life's metabolic functions.

Okay, that was a pretty convoluted explanation with a dubious sentence/paragraph structure, but I urge you that if you are seriously concerned about cholesterol intake to do some indepth research on medical science of blood cholesterol levels. There are so many fairytale fallacies that float around out there (like eggs being a cause of high cholesterol and unhealthy) that you owe it to yourself to do the research if you are concerned about your health.

Re: feeling guilty about all this bacon!

When I was on the Atkins WOL the first time 4 years ago, eating fatty stuff was the hardest for me to get beyond. I love my bacon but I have to be careful, I will eat too much and run up my cholesterol

Wondering how to get 'most' of your net carbs from your induction veggies?
