  • Spaghetti Squash

    In my neverending quest to make my son's new WOE interesting, I have recently bought a spaghetti squash. It's been so long since I had this veggie that I not only can't remember how to make it, but I can't remember if it's a high carb veggie or a lower carb veggie. I know I can go look this up...so no one needs to answer that part, but anyone know anything fun to do with spaghetti squash? (I mean, that involved eating it...lol!)

    Yum, spaghetti squash and meatballs! That's one of my favorites! I use spaghetti squash for anything that I would have used pasta for. I find it's a little sweet sometimes, but I adore it anyway!

    I'm sure there will be loads of people with some excellent ideas. Also, check out the recipes section. There had to be something lurking in there!

      Spaghetti squash is an induction-friendly veggie--it's an "other" veggie that you can have one cup of, daily.

      I LOVE to eat spaghetti squash three ways:
      1) Cooked, topped with butter and parmesan cheese (induction-legal)
      2) Topped with spaghetti/tomato sauce and mozzarella (OWL Rung 1-legal)
      3) Topped with chicken and broccoli alfredo (OWL Rung 2-legal)

        Spaghetti Squash Gratin


        2 1/2 Pound spaghetti squash
        9 Fresh sage leaves
        1 Garlic clove, minced and crushed to a paste
        2 1/2 Cups (about 8 ounces) grated Swiss Gruyere cheese
        3/4 Cup heavy cream
        Salt and freshly ground black pepper


        Preheat the oven to 375 degrees. Cut the squash in half and lengthwise and place the halves, flesh side down, in a baking dish with enough hot water to come 1/4 inch up the sides of the squash. The water prevents burning and helps steam the squash so it cooks more evenly. Cover with aluminum foil and bake until the squash is soft when poked with a knife, 1 to 1 1/2 hours or cover with a lid or plastic wrap and mmicrowave for 15 minutes. Spoon out and discard the seeds. Scrape along pulp with a fork and pull out and reserve the shreds. (Leave the oven on at this point unless you're baking the squash in advance.)

        Rub the bottom of a meedium (8-cup or slightly larger) gratin or baking dish with butter.

        Finely chop 6 of the sage leaves and toss the "spaghetti" with the chopped sage, garlic, 2 cups of Swiss Gruyere, the heavy cream, and salt to taste. Spread this mixture in the baking or gratin dish - the squash layer should be about 1 inch thick - and sprinkle over the rest of the cheese. Arrange the 3 remaining sage leaves on top of the gratin. Bake for approximately 45 minutes. If the top of the gratin doesn't turn golden brown in the oven, slide it under the broiler for about 1 minute to brown it. Grind over some fresh pepper and serve immediately. Makes 6 as a side dish.

          SPaghetti squash is induction legal, but it is a touch higher in carbs, what makes it better is it has high fiber.

          My favorite way is cut in half, open down in microwave for 15 minutes, scrape out the good stuff, touch of salt, pepper, and some butter. Sometimes a touch of parmesan cheese, not too much though it'll bury the flavor, since the squash itself is so mild.
