    I have an aversion to chicken skin...so I eat fried chicken but peel the skin off....never have eaten the skin!

      I've used almond flour to make that chicken parmesan. It's a little tough to make it stick (but that could be because mine was of a coarser texture than stuff you'd buy), but it tastes great!

        I haven't tried it, but someone did post a recipe with almond flour for fried chicken that apparently was great, I'll have to see if i can find it.

        Julie do you make your own almond flour? it can be hard to get it fine without ending up with almond butter, though it's excellent as well

          I do make my own almond flour, though I do it in very small amounts. I've used it to make a small almond flax muffin/cake, and as a coating for chicken parmesan. I measure out 1 or 2 oz. of almonds and put them in a coffee grinder on the finest grain setting. It actually grinds it into a nice meal rather quickly--I only do it for a few seconds, because, like you said, I don't want to end up with almond BUTTER! If I were baking a cake or something, I'd splurge and buy the REAL almond flour...though it's pricey--they sell the Bob's Red Mill stuff at the local health food store for $13 a bag. So my coarse stuff is much cheaper, probably tastier, and works just fine for what I'm cooking.

            Oh... I also occasionally have oats (small portion) for breakfast, uncooked and made into muesli, by adding chopped nuts and chopped dried prunes... with "milk" made from watered down cream.

            Most evenings I also have a glass of red wine, though I've dropped this since Christmas. I mean to start it up again pretty soon though.

                    Back to the fried chicken...I've made fried chicken nuggets by dipping small pieces of chicken meat in 1 egg with about a tsp of thickener like xantham gum then deep frying them. My original recipe was for General Tso's chicken (thickened with corn starch), and the "breading" has that same texture as what you would get at a Chinese restaurant. It also calls for taking the fried chicken nuggets and re-frying them in the oil, but I've never noticed a difference between frying them once or twice.

                      if you do a search Barbde did post a really good fried chicken recipe someplace ..it was I remember right half almond flour and half parm and did it in oil in a skillet ..it is very good

                          Well... could've been me, actually... or some other almond flour fan. But I do remember posting, way back when, that I use almond flour in oodles of things. It's deeeeeelish, and so handy, I love it!
