The amount is very small - so long as you count the carbs in your total (and keep within the 4 oz/day limit during induction) I wouldn't worry too much. It's good you noticed it, though! You will also notice if you look hard enough, that even your artificial sweeteners and supplements have got such fillers.

A good investment is a cheese grater, too, if you want to be a purist and avoid all refined starch and sugar.

The label on food should indicate the nutrition infomation for the entire consumable contents (not just one ingredient unless stated so) of a package per stated serving size, with grams rounded up or down to the nearest whole number. So if the label says 1g count 1. If it says 0g carbs, but you see starch or other known carb source in the ingredients, count 1g per 2 servings (usually they reduce serving size just enough to get away with the 0!!) LOL Of course, if you see fiber grams subtract that from your carb total.

When I found out about it I also freaked out, it didn't hurt me back then but I did make sure never to use the 'pre-grated' cheese anymore and indeed grate it myself now.

                Re: new with question

Wow! I had no clue. I grate my own cheddar, gouda, parm cheese but I tend to buy shredded gratin type cheese and mozz cheese. Off to check my grated cheese!

                  Re: new with question

I'm lazy so I eat the grated cheese all the time. I noticed the starch ingredient on the cheese I buy also and it does not seem to set me back.

                    Re: new with question

I hate cleaning my cheese grater, so I eat the pre-shredded quite often.

I think there must be a very small amount of potato starch/modified food starch in these because I haven't really noticed a difference as far as weight loss if I'm shredding all my own or buying the packages pre-shredded.

Yep, cleaning a grater is a bore...but with a little brush it's not so bad.
