  • Addicted to potatoes!!

    I am getting ready to start the induction phase and although I can readily give up sweets like candy, cake, etc... (ginger ale soda will be difficult), I am concerned about giving up potatoes. I eat them with EVERY meal. In fact for a few years I have given up on vegetables (I do like them) and been eating meat/potatoes.
    This, to me, is going to be the hardest part of this "way of eating".

    How about something like this? It's wonderful and honestly you will not miss potatoes.




    "LOADED" CAULIFLOWER
    1 cup cooked cauliflower
    1 teaspoon butter
    Salt and pepper, to taste
    1 ounce cheddar cheese, shredded
    1 tablespoon ranch dressing or sour cream
    1 strip bacon, crumbled
    1 teaspoon chives

    Butter and season the cauliflower. Place in an individual-serving baking dish, then top with cheese. Microwave or broil until cheese is melted. Top with ranch dressing, bacon and chives.

    Makes 1 serving Per Serving: 290 Calories; 25g Fat; 12g Protein; 6g Carbohydrate; 3g Dietary Fiber; 3g Net Carbs

        I absolutely LOVE potatoes. While others can tell you how much cauliflower tastes like potatoes, they really don't. But they're good. They don't taste like potatoes, but you have to tell yourself that it's all a matter of perspective. They taste good enough. I would MUCH rather have a baked potato loaded with sour cream, cheese, and bacon. But cauliflower loaded with the same will do in a pinch. It satisfies the immidiate hunger, and the urge for the real thing will pass. Have some chicken wings instead...they rock!!

          I didn't say they tasted like potatoes, they are an excellent veggie choice that might help the potato craving.

          And yes, chicken wings are good. But you can't substitute them for veggies.

            Hey Dream,

            I didn't mean to offend. I didn't mean that YOU said cauliflower tasted like potatoes. It's just that people like, oh, Friday's, say that. You are totally awesome and I always listen to your advise. Thanks for all your help with educating us "newbies" on the right way to eat....

                Yeah, there are many recipes out there touting cauliflower as "mock" potatoes. I am fortunate in that I hate potatoes (except for french fries, of course!)

                  Oh gosh, you're lucky. I was definitely a meat and potatoes person before. I really do miss them!

                    Thanks for the recipe. It does look good. Am going to try it tonight. Still having a tough time with the "fat" thing though. Trying to change my way of thinking about fat. Heart disease runs in my family as does diabetes. Its difficult to dive into eating this way when you have been taught to believe that "low fat" is the way to go.

                      Me too, Buddyjay. My dad died of a heart attack at 47. But I keep reading all the posts about how people's numbers have changed dramatically - blood pressure, cholesterol, everything. It sure looks promising.

                        Being diabetic I will tell you that this is a GREAT way to eat! Before Atkins, without insulin my blood sugars would usually be in the 200-300 range, even getting up to 500 sometimes! Now, without insulin, my waking blood sugars are in the low 100's!! This morning it was 105.. Normal! I know it's tough sometimes because we have been bombarded with the low-fat crap our whole lives, but believe me, this is SO much better!

                        Let us know how you like the cauliflower. I personally love it. It doesn't taste like potatoes, but it's close enough. Also try zucchini. I shred it and fry with butter or oil, hashbrown style. So yummy!

                          Giving up potatoes might be less painful if you realize the true impact they have on your health. Here are a couple of quotes that give facts about potatoes:

                          "A lot of people still think that it is plain table sugar that people with diabetes need to avoid. The experts used to say that, but the glycemic index shows that starchy complex carbohydrates, like baked potatoes, can be even worse."

                          "Many of the glycemic index results have been surprises. For example, baked potatoes have a glycemic index considerably higher than that of table sugar."

                          Love yourself, and make this way of eating truly a way of life. Don't dwell on the things you can't eat, but get into the exciting experience of learning about new foods and recipes and ENJOY!

                              I remember a long time ago seeing some sort of diabetes pamphlet. It had a picture of a brownie and of a potato and asked (something like) which one raises your blood glucose the most. The answer (shocking to me back then) was BOTH. Funny this is.. if they knew this back then, why are they still advocating that most of your diet comes from carbs?!
