  • Induction Beef & Broccoli Recepie Anyone???

    Hi there! I was wondering if anyone has a Beef & Broccoli Recepie you can share. Before Atkins, I used to add cornstarch to the spices to thicken it up. Ofcourse, since I can't do that anymore, I'm wondering what else to use in it's place and what other spices would work as well. Thanks in advance!

      I use xanthan gum powder. I used it last night for this exact thing. My basic recipe is

      4 ounces of diced onion
      2 tbsps butter
      1 huge steak

      Brown the onions in the butter, then sear the steak on both sides, then put in 2-3 cups of water, cover with a lid and put on low. Cook for about an hour flipping the steak once. Then pull out the steak and slowly add in the xanthan gum. And I mean slowly, that stuff is potent. Mixing as you add it. Turns out to a perfect gravy. I used that on top of the steak and steamed broccoli. Delish!

        Oh and if you don't have the gum, just put more veggies in and puree it.

          Great recipe!!

          You could probably lower the carb count by using spring onions (green onions?) instead of ordinary ones without changing the taste too much
          Wondering how to get 'most' of your net carbs from your induction veggies?

              For an Asian-flavored Beef and Broccoli...

              Steam your broccoli and set aside. Thinly slice the beef or whatever meat you're using. Then thinly slice a 1 inch piece of fresh ginger root, thinly slice a clove of garlic and thinly slice a green onion (like Elizellen said). Heat a skillet and add a tablespoon or two of oil. Add the ginger root and let it cook until you can smell the ginger. Then add the garlic. Let that cook until it's a golden brown. Don't let the ginger or garlic burn. Then remove the ginger and garlic slices, because you want to flavor the oil with ginger and garlic. If you wish to add them back into your stir-fry you may towards the end. Saute the meat, until it's cooked. You may have to do this in batches. Pour off any excess oil and return the skillet to the heat. Then add the broccoli, cooking only to heat it through. Any water that clings to the broccoli will deglaze the skillet forming very light sauce. If you wish, add a tablespoon of water or meat stock at a time to the skillet, scraping the bottom with a spoon to get up all those brown bits (that's where most of the flavor is.) But you should have no more than a tablespoon of sauce by the time you're finished. Add the sliced green onions and the ginger and garlic if you want. Add a teaspoon of soy sauce, if you want. Serve.

              This stir-fry won't be gloppy like take-out stir fry, but it will have the flavors, which will be very clean and distinct. The sauce you made will be more like a glaze on the food.
