  • I know, but would anyone be interested in a free book of south beach diet recipes

    I know that all may not be 100% Atkins ... but there are some really good recipes and in a nice downloadable form. Actually if someone wants to look at it and review which ones are allowable on Atkins we can use it to start a downloadable Atkins Recipe Book. What do you think?

        I made these two recipes for dinner tonight, and they were very very good. I'll make this next time I'm having friends over for dinner. Both recipes were very company worthy. Hubby enjoyed them too.

        Avocado and Tomato Salad (P1)

        2 ripe avocados
        4 ripe plum tomatoes
        2 hard-cooked eggs, peeled and quartered
        1 small red onion, peeled and cut into thin slices
        1/4 cup coarsely chopped fresh coriander
        2 teaspoons garlic, chopped (about 2 cloves)
        6 TB olive oil
        2 TB red wine vinegar
        1/2 teaspoon ground cumin
        salt and pepper to taste



        Directions:

        1. Peel the avocados and cut them in half.� Discard the pit and cut each half into 4 lengthwise slices.� Cut the slices into large cubes.

        2. Core the tomatoes and cut them into 1-inch cubes.

        3. Toss the cubes of avocado and tomato with all remaining ingredients in a salad bowl and serve.

        Chicken with Lemon-Caper Sauce (P1)

        Makes 4 servings.�

        1/4 teaspoon salt, divided
        1/4 teaspoon black pepper, divided
        4 (4 ounce) boneless, skinless chicken breast halves
        1 tablespoon extra-virgin olive oil
        olive-oil cooking spray
        1/3 cup extra-dry vermouth (or low-sodium chicken broth)
        3 tablespoons fresh lemon juice
        1 � teaspoons capers
        1 tablespoon chopped fresh parsley

        Directions:

        Sprinkle 1/8 teaspoon salt and 1/8 teaspoon pepper evenly over chicken.� Heat oil in a large nonstick skillet coated with cooking spray over medium-high heat.� Add chicken; cook 6 minutes on each side or until chicken is done.� Remove from skillet.� Set aside; keep warm.

        Add 1/8 teaspoon salt, 1/8 teaspoon pepper, vermouth, lemon juice, and capers to skillet, scraping skillet to loosen browned bits.� Cook until reduced to � cup (about 2 minutes).� Stir in parsley.� Spoon sauce over chicken.

        The only thing I did differently with the above recipe is I added 2 tablespoons of garlic/herb butter in the final step. Twas good.

            Thanks Tom... one can never have too many recipes, wherever they come from (if they're legal, of course!).

              A lot of the recipes can be easily adapted simply by using full fat ingredients instead of their lower fat counterparts. ie. full fat cheese instead of low or fat free, sour cream instead of fat free yogurt, or full fat yogurt if you're on the dairy rung. Some of them have obvious no no's. All in all, good stuff from what I can tell. I did print the whole thing and put it in a binder, and last night I started marking the recipes I want to try with sticky notes.

                  Mmmmmmmmm! Some of these recipes look really good and it is fairly easy to see how to change those that need adapting to be Atkins legal. I am going to try a few as soon as I can.
