  • A question about salads

    This is my first post to this forum, hopefully I put this in the right place.
    My question is concerning salads, lettuce (iceberg) in particular.
    The book tells me I should eat 3 cups of salad vegetables and that 15g of carbohydrates should come from that. This much I understand. But I love salads. Just a plain lettuce salad with oil and vinegar for a dressing.
    Since 2c of lettuce only has about 1g of carbohydrates does this 2 cups of salad vegetables include "total" lettuce?
    For instace, as a dinner meal last night I had a grilled chicken breast, 1/2c of broccoli, and a salad consisting of 3c lettuce with crumbled bacon and 1/8c cheese with oregeno, oil, and vinegar. Did that one meal "overdo it" on my salad vegetables?
    Or am I reading too much into that?

    You're best to spread your veggies over the day to avoid blood sugar surges. Also, it's a good idea to eat some salad veggies that are more nutrient dense than lettuce, like celery, tomatoes, fennel etc.

    On your menu for last night you went over by half a cup (the broccoli). You can eat one cup of "other" veggies like broccoli, but in substitution for one cup of salad.

      OK, I'm clear on it now.
      It's 3 total cups of vegetables and not in excess of 15g of carbohydrates.
      For some reason, since salad was so low in carbohydrates, I thought I was allowed to have more of it and that the 3 cups of salad vegetables only pertained to other items such as turnip greens, broccoli, squash, etc.

        I like salads too but you may only have 3 cups of salad or 2 cups of salad and 1 cup acceptable veggie

          It sounds like pj7 is one Atkineer who will easily be able to eat the recommended vegetables - well done you

          It is so refreshing to read someone NOT worrying how they are ever going to eat 3 whole cups of vegetables in one day!!

          PJ7, make sure you move to the first rung of OWL as soon as your 14 days induciotn are over so you can 'legally' add more veggies and not have to worry about eating too many!

            Thanks Elizellen, I grew up on a farm and we grew our own vegetables and raised our own livestock. It wasn't until I moved to the city that I became familiar (and quite familiar might I add) to the fastfood lifestyle that has put me in this situation that I currently am finding myself in.

            Yeah, my problem will be not getting the ammount of vegetables that I would like.

              On the Induction Acceptable Foods List, there are about 20 vegetables listed on the "salad vegetables" list. IF you choose to eat 3 cups of those salad vegetables, you can pick any combination of them. Alternatively, you can eat 2 cups from the salad vegetables list and 1 cup from the "other vegetable" list. The other vegetables list veggies are generally higher in nutrients---vitamins, minerals and fiber.

                Yes... for a veggie lover, induction is quite hard. I know that I was really pleased to move to OWL, mainly for the extra veggies.

                Growing up to home grown veggies (and livestock) must've been fantastic pj7! Lucky you!

                    I've been on induction for 3.5 weeks now. My biggest problem too is not being able to eat more veggies. However, since I keep track of my carbs on FitDay, at the end of the day after my 3 cups of veggies I end up with like 9 carbs. How is this possible. How am I ever going to reach my 15 carbs from veggies if I'm only allowed 3 cups?

                    Do you all know something I don't? What am I doing wrong?

                    Would anyone mind looking at my food diary in FitDay? Thanks!!!

                      As megs said above, you can eat more than just lettuce:

                      Elsy you might want to cosider moving onto OWL as well, the first rung is the veggies run where you can add 5 net carbs more of veggies.

                        Thanks for responding.

                        I have considered moving on, but I still have to lose a lot of weight. I'm 215 now and my goal is 160. Dr. A recommends staying at least 6 weeks on induction if you have a lot of weight to lose. I've read that chapter over and over considering the possiblity of moving.

                          It depends on what kind of veggies you are eating. If you eat asparagus the carbs will add up more quickly. You might want to check if you are getting your daily nutrients, folate, potassium etc. because you'll find that if you are not the cummulative effect day after day is going to take its toll on you.

                            I actually have more weight to lose. I am currently have about 112 pounds to lose (130 altogether). However, I actually lost MORE weight on OWL Rung 1 with the extra veggies than I did with induction. I lost 8 pounds on induction and 10 pounds in 2 weeks on OWL rung 1. Hope this helps.

                              I totally agree with you. It is hard to reach with just 1 cup of allowable vegies plus 2 cups of salad...
