  • Lunch ideas please

    Hi guys

I am having problems deciding what to take to work for lunch. At the moment I keep buying meat at lunch time but it’s costing me a small fortune so I need to be taking my own stuff to work with me.

I don’t really like salad unless I can cook it (mushrooms, onions, garlic etc) which I cant do at work. Also I’m quite a big lunch time eater, I tend to eat more at lunch than Breakfast or Dinner. Anyone have any ideas?

    Thanks!

Lately, I've been having the same think for lunch every day, because it's easy and it takes the guess work out of lunch.

On Sunday nights I cook a large filet of salmon that I buy at Sam's Club. I cut it into 5 pieces, and each day I take a piece of salmon with a small salad to work. I've been having this for almost 3 weeks in a row, and so far, I'm not getting tired of it, but I think that's because I really love salmon.

For me, I've cooked up chicken breast on the grill and then made either chicken salad (w/mayo, seasoning, and pickle), sliced chicken to go on top of a salad and put in a ziploc bag to eat on the go, fajita's using large leaf lettuce.

Sometimes I just heat up left overs, or even grill up burgers, chicken, and even steak on the grill to eat during the week. On occasion I mix up tuna and eat that with celery and cream cheese w/cherry tomatoes.

      Best wishes!

Right now, I'm hooked on low sodium Albacore tuna with celery, mayo and lots of pepper. Bring or wrap it in Romain lettuce - delicious!

If you have access to a microwave at your place of work, you can make a 'real' meal---cooked meat and cooked veg---pack it into a microwave safe container and heat it for lunch.

IF you don't have a microwave oven, you can find Thermos jars that will keep your food hot. So dishes that combine the meat and veg (like stir-fries or stews) would be ideal for this.

I always make a little extra for dinner, then bring leftovers for my lunch the next day. Makes it easy.

Preparing the night before makes it so much easier. Make a bunch of tuna or chicken salad or egg salad.. Slice up veggies to dip in ranch or blue cheese dressing. You can dress up a salad w/ some hardboiled egg or shredded cheese, or even a few slices of bacon for a cobb salad.
When I am in a huge rush, I grab a few slices of pepporoni in a baggie and some veggies. The pepporoni heated up in the microwave makes them tasted delish!

Thanks, I like the stew/stir fry idea and the pepperoni and veggies sounds goooood! I shall start with a stew tomorrow I think
