  • Sometimes there are Hard Times...

For a few weeks now, at home there's been a shortage in income...

In about 5 occasions within the past 2 weeks We've had beans and rice at home.. I also did cereal twice (you know, thinking "I already mess it up with beans anyways" . That altogether made me gain and go and to 195 (I was 190 already) ...

But friday night we went and got groceries, but I didn't get my usual chicken breast or steak... Cuz the money wasn't enough for more than a 2 day supply of my meat goodies... So I chose to buy a 8 day supply of Wal-Mart Brand Tuna (at 50 cents each)...

So I've been in tuna as protein .. day and night since last saturday. Hoping this decision has taken me in induction again. I haven't hit the scale since saturday morning, which said 195...... and because of that I've lost only from my initial 205 .. JUST 10 POUNDS!! My God and I started like 2 months ago...

My DH asked me last night.. "Baby, don't you think this diet is kind of... very expensive?"...

I said.... This is my health and I'm not planning to give up. If I have to eat tuna with mayo for months, but I'm gonna lose weight, that's ok with me..

He smiled and said : ok, I like that!

    ......

I know there's times when we don't see the light.. But at all those times, God has taught me something, and each and everytime He has responded to our prayers in miraculous ways, no kidding.. I'll always trust Him even if I have to eat Great Value Tuna... and I know the time of blessing is coming

Re: Sometimes there are Hard Times...

Danie, I love your attitude, and I love the fact that you don't make excuses.

I think eventually you will see some savings. At first I thought the plan was very expensive when I would go to the grocery store. But for me, in the long run, Atkins has been cheaper than my previous habits. I gave up soda, and so that means I've saved about $400 since last August. I have also given up fast food, so there's $1000 since last August!

I try to buy things on sale, like ground beef (which freezes well), butter, canned veggies, frozen veggies, huge blocks of cheese, etc. Eggs are usually quite inexpensive, too. You will be able to do this! I know you will.

You are right--your health is NOT worth giving up!

Hey there Danie. Ah mate ... I'm sorry to hear you are going through financially tight times. Have you tried stuff like chicken wings, chicken liver (not to everyone's taste I know), stewing quality beef (usually a lot cheaper and quite okay if braised), cheaper cuts of pork (we call them pork rashers over here - sort of belly cuts),eggs of course. These are the ones I eat a lot of because like you I can't afford to keep myself in high quality meat. But I'm finding that the cheaper cuts can work out okay. And yes ... I've resorted to tuna too.

And let's not forget ground beef (or beef mince as we call it). My staple food. I like to fry it with my permitted veggies. Very nice .. and goes a long, long way - serve on a bed of cabbage tossed in butter and pepper. Luv to ya.

Thanks Gaynor you know the last time I asked God for His intervention I was crying in my window.... and 2 crowes stopped by on the fence just before my eyes... and I remembered Elijah beeing fed by crowes in 1 Kings 17... when there was no rain on the land... and deep in my heart I felt peace and a voice that said "I'll take care of it".. My DH is an Evangelist and he works day and night on his shop when he's not preaching in Mexico or in the US...(he has a Body & Paint Car Shop)... and I said God: I wanna see your hand... that night he came in very cheerful and told me he got not 1, not 2, not 3, not 4, but 5 cars to fix... I was so happy and said thank you Lord... but the very next morning I was on the internet and a cousin from Mexico told me: I'll send you the 1,000 dollars I owe you -he had borrowed them someday in 2006!! I didn't even remember!!!!- .... so God did it again!!!... Thanks Gaynor. Please keep me in prayer!!!! He is Able.

                Hi Danie,

I have been there too. I think tuna is yummy, but after a week I am sure it gets pretty old too. I am hoping your financial situation turns around soon. Try to stay positive!

Hi Daniela. I feel for you. This woe can be expensive. But as with the others I find when I'm having a tight month the best thing for me to go for is ground beef - they make great homemade burgers! or chicken thighs or legs. I can get a pack of 12 chicken legs for a couple of euro. And then I can get at least 4 dinners out of that. It helps.

I hope things get a little easier financially for you. I love your attitude. Take care.

For hamburgers, I don't put anything in! The key is packing the meat tightly. I add pepper and salt and Nature's seasoning, that's it! You could probably add pork rinds for filler, I think that would work, or perhaps parmesan cheese?

wow! You are determined! That must've been hard eating tuna for so long... good for you for sticking with this...
About ground beef... I like to use mushrooms (chopped very fine) and onions as a filler to make it go farther... could also add peppers too.

You can use Parmesan cheese or abit of beaten egg? I've made meatballs with ground beef, ground pork, parmesan, chopped cooked onion, salt and pepper, bake for 30 mins. They are lush!

I made this tuna cakes with just eggs... with salad and mayo yummy they came out so crispy!! I became a canned tuna expert.. the best flavor, chunkiest tuna is Kroger (at food 4 less, etc).. and Great Value at Walmart.. starkist and bumble bee are nasty, almost liquid an stinky.. but I found in my tight-week learning curve that the store brand tuna is the BEST EVER and ranges from 50 to 68 cents a can.........Anyways, My hubby brought yummy chicken breaST today, that was dirty cheap on sale!!!! 1.87 per lb skinless-boneless.. .. hey I'm back in ketosis again, losing at a 1lb a day-pace.... love you guys thanks for your advice and support!!
