    I love to wrap a few pieces of asparagus in bacon and cook on the grill. It is to die for!!!

      I'm an eggplant fan too... any way at all. Usually I slice and grill or bake them, then drizzle with a little vinegar, lots of extra virgin olive oil and sprinkle with chopped parsely and slivers of garlic (which you don't need to eat). Cover and leave overnight for the flavours to mingle, then eat as an appetizer. Bliss.

      Also good in ratatouille, which is a mixture of onion, garlic, celery, diced zucchini, peppers, a little pureed tomato (not too much) and eggplant. Sweat the first three ingredients in olive oil then add the others (eggplant a few mins after the others as it cooks quicker). Cook until done. Delicious hot or cold.
      In the south of italy they also put in a dash of vinegar, pine nuts and a few sultanas, but it's a matter of taste. If you are in OWL, a bit of potato is good too, but don't overdo it and be very aware of the carbs as eggplant is already quite carby.

      I also love green string beans, top and tailed, boiled until only just done then tossed in olive oil (always top notch extra virgin) where you've previously sweated garlic cloves (you can then take them out), chili pepper to taste and canned tomatoes or chopped cherry tomatoes (not too many, just enough to keep the beans moist). To be eaten warm. Yummmmm

          cabbage quarters, wrapped in bacon, wrapped in foil and tossed on the grill. I usually make that my meal as I LOVE it. (those that heaven forbid arent big bacon fans can leave the bacon out and drizzle with olive oil and butter before wrapping in foil.) (this also makes its way to our campfires when we go camping).

          cauliflower raw with a good ranch dressing.

          brussel sprouts roasted on high heat drizzled with olive oil, sea salt and cracked pepper. the sugars carmalize and are fabulous.

            yup, chayote squash makes a terrific substitution for potatoes.. sometimes in the past as I was eating my beef stew had a hard time figuring out which one was the potato and which the chayote.. here in San Diego in expensive is about 75c each!! down there in Mexico they sell them the for 2lbs (more than 2lbs, a kilo) for 1.30 but well... my point was.. chayote is yummy with salt and butter just as a potato.

              After re-reading my post, I just wanted to clarify that the 11 net carbs is without the walnuts, so you would need to add in the extra carbs for that if you use them. Didn't want to mess any of you up in case I didn't make that clear.

                I tried eggplant for the first time during the Veggie Challenge. I must have done something wrong... it tasted like a mildewed sponge. I brushed olive oil on it and put it on the grill. Maybe I didn't cook it long enough?

                Disco, I've never tried fried cabbage but I hear great things about it. Tired of Chub, your cabbage idea sounds good, too.

                Joy, I am curious about fried green beans. And those chayote squash are in all of the stores in my neck of the woods. I live in Louisiana.

                Asparugus - have never tried that, either. Going to have to!

                Oh, yeah - The only way I have eaten jicama is raw. It's a great snack for when I work in the boutique. Finger food with no mess.

                Everything sounds good! (Still scared of eggplant, though )

                      I love eggplant cut in thin layers length wise and brushing it with olive oil and putting it on my gas grill. Grilling it on both side and then placing ricotta cheese on one end and rolling it up. Then pouring marinara sauce over the rolls, shredding fresh parmesian on top and baking at 350 degrees for about 20 minutes till heated through. You can also mix cooked italian sausage in the ricotta cheese if you'ld like. I also love artichokes, brussel sprouts fried with bacon and onion, yellow squash, zuchinni,green beens, brocolli, and of course our dear friend the cauliflower. I just plainly love all fresh vegetables except,rudabagas and parsnips.

                          Reading through this thread makes me hungry!LOL Great suggestions, everyone!

                          Mitzi, I like to grate turnips and fry them in bacon grease. MMMMM. They don't really crisp but taste pretty darned good. I had forgotten all about turnips until you mentioned them; they're another veggie I had never eaten prior to Atkins! I also pop some in with our roast when I cook one. The rest of the family can have the potatoes and carrots and I get roasted turnips! I pity them.

                          Hmmm, I don't really care for asparagus, but I've never tried it your way,Momtofour. It's something to think about.

                          Tired of Chub, your cabbage sounds TDF!

                          Okay, all you eggplant lovers have convinced me to stop being such a weenie. I'm going to bite the bullet and buy some.

                          Artichokes! How could I have forgotten artichokes??? I love the ugly little boogers! Brussels sprouts, too!

                                I've made scalloped turnips (well, it was a half turnip/half celeraic mix) which were quite good, and I've also made faux mashed potatoes with turnips, but I never got rid of that bitter "turnip" taste.

                                To tell the truth, I haven't had much success making mashed fauxtatoes, and I've tried both cauliflower and turnips. Any tips?
