    To tell the truth, I haven't had much success making mashed fauxtatoes, and I've tried both cauliflower and turnips. Any tips?

    When I make fauxtatoes out of cauliflower I cook it really well. I pour off any remaining water. I mash it with a hand blender while adding in butter, cream cheese, salt, and pepper to taste. I think they are wonderful. In fact, my kids like them better than real potatoes. Whenever they see two heads of cauliflower they start asking when we are having it.

      faux potatoes are great! I gave some to my boyfriend (without telling him it was cauliflower) and he loved it .. he actually said to me " hey I thought you werent supposed to be eating potatoes!" i boil up the cauli until it is well cooked -- then puree in the food processor. toss in some butter and cream and a crumbled chicken boullion cube and a touch of salt and pepper - yum

        Cool! I'm glad you've found a new way to have veggies.

        Thanks to Elizellen and Paula for the turnip suggestions. I have some in the refrigerator right now that I didn't know what to do with. I'll try both ways.

          I love LOVE L O V E roasted veggies. Almost anything works but my favorites are:

          Onions and Mushrooms (I gotta have at least one everytime I roast veggies)
          green and yellow squash
          peppers - any color

          I toss them in olive oil and my favorite spices and put them in one layer on a baking pan. Put in oven at 400 for at least 20 min. I like mine almost over done and they shrink up alot so if you are having trouble with volume this is a great way to get in alot of veggie carbs. Can be hot or cold (rebake with cheese on top for a complete meal!)

          I use these roasted veggies in omlets, salads and on their own. Nummy.

            Ratatoullie! Take peppers, squashes, onion, garlic, tomatoes and saute with olive oil. You can experiment with mushrooms, eggplant or any other veggie that appeals to you. This usually makes a big batch simply because of all the veggies and it tastes better the next day.

                Purple, well you can add it to a dip, but it's still raw!

                Ingredients:
                cream cheese, softened
                sour cream
                finely chopped cucumbers
                finely chopped onions
                lemon juice
                salt
                dill weed
                garlic paste/powder/puree
                pepper

                I left out the amounts because you can make this dip more "dippy" or more of a veggie side. This is based off a store-bought dip that I really loved. I ate it with bell pepper chunks, but you could use it as a dip for any veggie. It's a good way to get some EXTRA veggies in, especially if you're on OWL.

                I also think Adena made cucumber sandwiches or something...you'll have to ask her for the recipe!

                  Psst. I'm here. I was going to post earlier, but then thought I might get in trouble with Jo. But, this isn't a journal so it's fair game, right?

                  I slice cucumbers, either round or lengthwise, whichever you prefer, then spread a piece with cream cheese, and then top with another cucumber round. Then sprinke the lightly with salt. My husband doesn't really even like cucumbers, and he really likes them.

                      I think I've seen recipes for cucumber soup...

                      Cool Cucumber Soup (from the Good Housekeeping website)


                      *3 cucumbers (about 8 ounces each), peeled, seeded, and coarsely chopped
                      *1 cup plain yogurt
                      *3/4 teaspoon salt
                      *1/4 teaspoon coarsely ground black pepper
                      *3 large ice cubes (about 1/2 cup)
                      *1 cup loosely packed fresh mint leaves, coarsely chopped
                      *Thin cucumber slices for garnish

                      1. In blender, combine cucumbers, yogurt, salt, and pepper; blend until smooth. 2. With motor running and center part of cover removed, add ice cubes, 1 at a time. Add mint and blend 5 seconds longer. If not serving right away, cover and refrigerate up to 1 day. Garnish with cucumber slices.

                      True, this isn't a cooked recipe, but it sounds like a great way to get those veggies in during the summer! This would have to wait until rung 2 of OWL because of the yogurt, BUT, I know that you could replace the yogurt with silken tofu and it would be induction legal.

                        COOKED CUCUMBER SALAD - OI BOK KUM NA MOOL

                        Recipe By :
                        Serving Size : 4 Preparation Time 00
                        Categories : Salads Korean

                        Amount Measure Ingredient -- Preparation Method
                        -------- ------------ --------------------------------
                        1 lg Cucumber
                        1 1/4 ts Salt
                        1 1/2 tb Sesame Oil
                        2 tb Finely Chopped Green Onion
                        2 tb Light Soy Sauce
                        2 ts Chili Powder
                        1 1/2 ts Sugar
                        1 tb White Sesame Seeds, Toasted
                        - And Ground

                        Peel the cucumber and cut into wide strips, discarding
                        seed core, then cut crosswise into sticks. Place in a
                        colander and sprinkle with the salt. Set aside for 10
                        minutes to drain, then rinse and dry thoroughly.

                        Heat the sesame oil in a pan and fry the cucumber with
                        the chopped green onion over medium heat until it
                        begins to soften. Add the soy sauce, chili powder and
                        sugar and toss until the seasonings are evenly
                        distributed. Transfer to a serving dish and sprinkle
                        with the sesame seeds. Serve warm or slightly chilled.

                          Thanks, Julie! These 2 sound really good! The Cool Cucumber Soup will probably have to wait until Rung 2, since I don't eat, and have never tried, tofu. Maybe I should buy some tomorrow and give it a try.

                            Radishes are good cooked with a roast. I put radishes in the bottom of a crockpot, put the roast on top, add water and beef boullion and then spices to my liking. DH loves it. I also like to add cauliflower to the pot sometimes too.

                            I LOVE roasted tomatoes. I usually use plum tomatoes cut in half width-ways. I place them in a baking dish cut side up, throw in some garlic cloves and drizzle with olive oil. I bake at 450 for 45 min. You can also top with salt, oregano or any spice you want.

                              Oooo, that cool cucumber soup sounds really good. Like a cucumber gazpacho, which I love!
