  • Whats for dinner?

    I just went and bought the ingredients to make a chicken alfredo and i have some shiritaki noodles in my cupboard at home...

    i'm excited!!! this is a new dish for me!

      Hi Emma. I'm making a chicken/mushroom/asparagus casserole topped with sauteed onions.

              OK, I'll play. I'm making stuffed pobalono chiles on the grill. I'm stuffing them with sauteed onions, mushrooms, cooked ground beef. Drain and cool the meat mixture and crumble and throw in some crumbled cojita cheese and cumin seasoning. Salt and pepper to taste. You cut the tops off of the poblano peppers, sorta like taking the top off of a pumpkin when you carve pumpkins for Halloween. Then you stuff all the ingredients inside the pepper (remove the seeds if you're a wimp), stuff the top back into the pepper. Sorta shove it in the pepper so the ingredients don't fall out, and be very careful not to break the pepper. Them throw them on a medium hot grill and roll them around on the grill every 7 minutes or so for about 30 minutes. Made these for friends over the weekend and hubby wants more.

                    We had pork curry on caulirice with a dollop of unsweetened greek yogurt.

                        ENO I want the recipe for the chicken! I am having a big ole caesar salad (no croutons tons of bacon and cheese) because it is too darn hot to cook here today!

                            Tonight is grocery shopping night, so I'm picking up a rotisserie chicken while I'm there and serving salad with it. Again. Grocery night is always boring - too tired to cook after all that!

                              shiritaki noodles are yam noodles, theyre basically all fibre, therefore literally carbless!

                              its the first time i'd had them tonight, and they were pretty good, certainly not like pasta but good none the less - they made my plate look pretty normal!!

                              I think most people prefer to have them in chinesey style soups as they are more like the japanese noodle than a pasta, but i was good with what i did, i'll have it again though i need to work on my alfredo sauce LOL.
