It's really frustrating. One cup of cucumber is pretty obvious, one cup of romaine lettuce is not. Do you mash it down in the cup? Does anyone have a reference by mass and not volume for salad greens?

There is a sticky in the 14-day induction forum that lists the weight per cup of the induction veggies .
Soliwit compiled it from the info in the USDA database and posted it for us to use.

I do mine by weight. It is just easier in my opinion. I do it for all vegetables. I printed out the list (mentioned already) with the vegetables and their weights and put it on the fridge.Heidi

Hello All,
I checked my Atkins book.
On page 123
"and away you go: the induction phase"
It lists the "rules of induction"
Number 3.
(I am typing this out from the book)
You can eat three cups-loosely packed-of salad,
Now, I admit that I can't visualise how much a "cup of something" is because it's not a measurement unit I've grown up with using.
If something was described as -firmly packed- , then I bet that using my upper body strength, I could very firmly pack salad into a cup. The next person even more or less so firmly.
The book does say -loosely packed- on page 123. It also makes sense, because loosely packed is the only way to write about something that describes a sense of proportion and portion.Hayden.
