Just a quick question out there, and please direct me if I am asking in the wrong place. If you cook with wine, to make a wine sauce for steak or something (no flour or cornstarch) do you count it as the regular 2 carbs for 4 oz of wine, or does it get altered since you are cooking the alcohol out? thanks.

I found this handy table which tells you how much of the alcohol remains depending on cooking method

Alcohol added to boiling liquid & removed from heat .. 85%
Alcohol flamed . . . . . . . . . . . . . . . . . . . . . . . . . . 75%

I have moved this into the Main forum from the 14-day induction forum to avoid confusing new inductioneers, as alcohol is not 'legal' till we reach the alcohol rung of OWL.Wondering how to get 'most' of your net carbs from your induction veggies?

If in induction and you want to cook with wine, you can use very watered down wine vinegar as a reasonable substitute. Somehow, it's different if you water it down, than it would be just adding a small amount of vinegar neat.Before and after:
