  • Whats for dinner?

    I need some inspiration, i'm going shopping in about 30 mins

    so... what ya havin?

    It never ceases to amaze me of how easy and how effective this ***diet*** is!!




    I have since re-gained a bit of weight, but that is soon to be coming off again!

            I'm having chicken cut up into chunks with creamy mushrooms and steamed broccoli and courgette.

            For dessert I'm having 1 min choc cake from Linda's site - as I'm not going to be able to indulge in this on hols.

              My homemade kung pao chicken:

              diced chicken breast, 1/2 green pepper, 1/2 medium onion, garlic clove, all sauteed in olive oil, at end stir in 2T hot sauce and 1/2 oz peanuts.
              And a 1C side of steamed broccoli.

                Chicken breasts with sage and wine; spinach tossed in butter and parmesan; a small peach with cream.

                  I made tuna, I will eat mine on a bed of lettuce with olives and maybe HB eggs. I will mix the rest in with elbow pasta for the family

                    I'm so boring... i went to M & S and bought me a steak, i'm gonna have it with cauli-mash and sauteed mushrooms and i'm gonna have strawberries and cream for dessert - even though im allergic to them!

                      Sauteed salmon cakes and green beans with a sprinkle of onion. S/F Jello with whipped cream for dessert. Too busy today for anything more elaborate

                          i went the easy way out. I had a couple of brats with chipotle mayo.
                          nothing fancy from me.

                          Buffalo wings, not just for breakfast anymore.

                              I made some Creamy Dijon-Wine sauce again, but we had it over chicken instead of pork...OMG we're still licking our lips It's our new favorite!!!

                              Creamy Dijon-Wine Sauce
                              Ingredients

                              6 tbsp butter
                              2 tbsp onion, chopped finely
                              1/2 cup white wine
                              1 cup cream
                              2 tbsp dijon mustard

                              Directions

                              Melt 2 tbsp of butter in frying pan. Add onion to pan and cook until soft.
                              Add wine. Cook 3-4 minutes, until sauce is reduced by half.
                              Add cream and dijon mustard. Cook until thick, stirring constantly.
                              Once thick, remove from heat and add remaining butter while still stirring.
                              Top grilled chicken or pork with sauce.
