      Re: Shirartaki Noodles

They have an interesting texture. They're kind of chewy, some would say almost rubbery. They're very filling, and are quite plain, so they "mix" well with whatever you're cooking. I usually make chicken alfredo with them. I combine tofu shiritake noodles, alfredo sauce, broccoli, cauliflower, chicken, and mozzarella. YUMMY!

konjacfoods has the noodles and they say you don't need to put them in the fridge and they last for up to a year. So I guess it would depend on what type you get.

I thought I would add my own 2 cents on the noodles.

Hijiki, one of the ingrediants in shirataki, is also known to contain high levels of organic arsenic. Most people don't eat adequate amounts to get ill from it, according to the Japanese goverment, but it's something to consider. Some countries advise against eating Hijiki because of the organic arsenic presence.

I don't think they taste of anything, really. They are more a "consistency" than a "taste"... if that makes sense; and the consistency is chewy and rubbery. They make a good base for pasta sauces but are not really a pasta substitute tastewise.

                  Re: Shirartaki Noodles

I had mine in the fridge for 2 months before using them. They were ok. I've only had them once and thought they were a little slimy for me. I didn't like the texture. Too bad, they had a nice taste.

I think they'll probably be alright. I just detest the texture of them, but I guess they serve as a good pasta substitute.

I think yours'll be alright still Emma. I get mine sent from the UK via courrier, and who knows where they put them. They probably spend hours sitting in a lorry in the boiling summer sun. Despite this, I've never had any trouble with them. I think sometimes these "sell by" dates are largely to protect the producers, and stuff can be good far longer.

Usually one can tell if something has gone off, by the smell... though it's also true to say that until one rinses them, these noodles always smell off!!!

                                Re: Shirartaki Noodles

                                Haydens posted about it somewhere....

Shirataki noodles come from the roots of the Konjac plant.
(The Konjac plant is part of the yam family, I think I was told, maybe ??)

The roots are boiled down, and Hijiki seaweed is added, to get the high fibre "jelly" to congeal. This gluttonous mass is then extracted, just like mince meat is made from slab of cow.

Hijiki seaweed, although not the main ingredient of Shirataki noodles, smells of, can you guess? Dead fish.

You can buy Hijiki seaweed as a supplement in the UK. It will make your hair shiny I'm told.
