Im still in the induction phase of things and Im wondering if its okay to cook with wine since the alcohol cooks out during the cooking anyway??

Yes... the alcohol cooks out (most of it, not all) but the carbs remain, unfortunately.
Stricly speaking you should wait until the correct rung of OWL to add in alcohol, even in cooking.
On induction, I found that a good substitute for wine in cooking was wine vinegar very watered down (watered to almost the taste of sharp wine). Somehow, it's better to use the vinegar watered down than just adding a few drops of pure vinegar, though I can't for the life of me understand why as the liquid usually gets reduced in cooking.
For me this was a good standby, as here in Italy, cooking without wine is unthinkable!Before and after:
