YES! Actually, pumpkin is on the allowed vegetables list for induction.
If you can get it fresh, that's the way to go, but canned pumpkin (Pure, canned pumpkin, NOT pie filling) is fine too. It is an EXCELLENT source of much needed fiber.

I think it kind of be both. Today I ate with butter, it was delicious! But I've also read that you can put some splenda and heavy cream in for like a sweet potato thing. It's really good, low in carbs, high in fiber. Great for this time of year. Very filling too.
Sandra-there's a few recipes around here, (I saw a few on Linda's site too) for pumpkin cheesecake stuff, and the pumpkin custard stuff. Mmmm, sounds so good. I think I will have to get some pumpkin next time I'm at the store.
YUMM Pumpkin. SOmetimes i boil it then mash with butter and pepper. SOmetimes i make it into soup ( great with bits of bacon in it!) Love to roast it ( until it gets a bit black around the edges - nicely caramelised) Here in Australia we only eat it as a vegetable but I did try it mixed with Philly cheese and "pumpkin pie spice mix"and splenda .. which was an idea from the ADBB and it was pretty good too!
Sweet potato( Kumera) is also great roasted until slightly blackened -- I think in the USA you call it Yam? its Orange in colour and you can get purple skinned ones as well
I eat it daily for an inexpensive lunch. One pack of Splenda, a dash of cinnamon, or pumpkin pie spice.
It tastes like pumpkin pie, without the crust. I make up tupperwares each week, and simply grab them on the way out the door each day.
I usually eat mine with cream cheese and spices, then frozen...
Someone the other day on the board said something about Mitzi having a pumpkin recipe that is to die for. I believe they called it MUP - Mitzi's Ultimate Pumpkin...
Maybe they will come by with the recipe for us...

But not an induction or rung one vegetable, it comes in on the 'starchy veg' rung of OWL.
