    anyone have a receipe?
    Starting Weight: 190 (2005)
    Goal Weight: 140 (met goal summer 06)
    Current Weight: refuse to get on the scale but all my clothes don't fit
    New Goal Weight: 135

    I have never been a big cauli-fan, but these are actually very good!
    Also, on Lowcarbfriends.com, there is a faux-potato recipe with cauli and keto - Ketato mix, that may be a little better texture and enhanced flavor.


    JUST LIKE STUFFED BAKED POTATOES
    16 ounce package frozen cauliflower *
    8 ounce cream cheese with chives
    8 ounce shredded cheddar
    3 green onions, chopped
    1/4 teaspoon salt or to taste
    1/4 teaspoon pepper
    3 pieces bacon, chopped and fried until crisp
    Paprika, optional

    Cook the cauliflower until soft, about 8-10 minutes; drain very well and break up florets a bit with a spoon (it's also very good if the cauliflower is still a little chunky). Put in a greased 8 x 8" baking pan or 2-quart casserole. Mix in the cream cheese, cheddar, green onion, salt, pepper and bacon. Dust top with paprika, if desired. Bake at 350ยบ for 20-40 minutes, until browned and bubbly. Or, microwave, loosely covered, for about 40 minutes on 50% power, turning dish after 20 minutes.

    Makes 6 servings (5.5 carbs each)

    * You can use up to 2 pounds of cauliflower and there will still be plenty of sauce and cheese to go around. With 2 pounds of cauliflower the count would be - 12 servings (4.5 carbs each).

    I have since re-gained a bit of weight, but that is soon to be coming off again!

      that recipe Richt posted is the best one ever. We eat it regularly.
      My very thin hubby loves it.

        That recipe sounds amazing! I love lots of pepper, cream cheese, garlic, onion, and sour cream in my Mock Mash.

          It is good and I discovered something else recently. I have a magic bullet which I really don't think is all that spectacular but I was going to try to make Cauliflower mash with it the other day well it made more of a "soup/gravy" consistancy. I don't know if it's because I haven't had creamed gravy in so long but I swear thats exactly what it reminded me of. I put it on top of the meat I was eating. Of course it was doctored with the butter,pepper, cream)

          Sheila I've tried some of the recipes you've posted on your site before too. I love them and I am in the area of Texas where a lot of your pix were taken.

            thats the first time ive ever heard anyone mention a magic bullet! me and my friend watched a commercial abotu one for a whole hour earlier! we both want one! what dont you like about yours?

              Yes I watched the same infomercial and it makes it sound like the perfect item. I mean it works but it DOES not work like they say for one. It shows them just tapping the top to make stuff. I usually have to shake the **** out of mine to get everything close enough to the blade to make it work. lol

              I have made smoothies and chicken salad (both good). I think I use it a lot more now that I'm low carbing. It is decent I suppose it's a lot easier than dragging out a huge processor which I also own. If you look it up on a search engine I know there is mention of all the people that have problems with theirs I just found it after I got mine. But luckily mine was a christmas gift from the hubby.

                I make mine just by steaming the florettes 8-10 minutes. Cut them up small beforehand, so they steam evenly.
                After draining, I pour them into a bowl with lots of butter, salt, and pepper. I mash them with a potato masher. That's it.
                When you reach the dairy rung, you can add a dollop of sour cream.
