I told my coworkers that I would bring a low carb treat to work tomorrow. I remember from last time I did Atkins that almond pound cake is very yummy. I know my coworkers would love it. I have almond meal in my freezer but it's 3yrs old, so I stopped on the way home to buy new (aren't my coworkers worth it?). It's $14.99 for a 1lb bag!!!! Forget that!! The one in the freezer was "only" $7.49. What's with the almond meal inflation? Is there an almond shortage? Is that really the going rate now? What gives? I'm sending dh out now to scour the earth for almonds and I'll grind my own!

I buy mine at an Amish bulk foods store for $2.25 a pound. That store is a lifesaver or a dollar saver. I get all my spices, cheese, flax meal, nuts of all kinds, at pennies on the dollar of retail stores.

Too true - Dr Atkins suggested our OWL addition of nuts or seeds would be about an ounce for most varieties - not a whole bag, so if portion control might be a problem for you make sure you keep count if using them as a snack and work out how much almond meal would be in a portion of recipes that use them!!Originally posted by SunnySmile501Yes, but you have to watch portion size.

walnuts (approximately fourteen halves)
almonds (approximately twenty-four nuts)
pecans (approximately thirty-one nuts)
hulled sunflower seeds (three tablespoons)
roasted shelled peanuts (approximately twenty-six nuts)
1/2 ounce of cashews (approximately nine nuts)

Good idea, Sunny! Back when I used to bake bread, I used to buy yeast at a great savings at an Amish store. It's a bit of a hike, but it would be a lovely drive this weekend. I hope they have it.
Looking at my old bag, 1/4 cup has 6g carbs, 3g fiber, so I would count that as 4 since I ususally round up. The recipe takes 2cups, so that's 32g carb for the whole thing. Maybe you could get 12 servings out of it, but I think 8 is more realistic!

LOL! I am so proud of myself. I searched and searched online and found it for about $5.99 plus shipping and handling. The Amish place emailed me (yes, they have email!) that they don't carry it. And finally, I went to TRADER JOE'S and they have it for....get this... $3.69/lb!!!!! And it's local so no shipping and handling. VICTORY!!! It's not the pure white kind. It has the brown almond skin ground into it, but that's fine with me. That just means more fiber and lower carb count. My coworkers won't care when they eat the pound cake and it certainly won't matter when I make almond-crusted chicken breasts. I am so excited. Who would think that almond flour would make someone so happy?

You do know you can make your own almond meal with a coffee grinder? That's how I do it. I just by the almonds in bulk at the grocery store.
