Just a minor point that should be noted because it appears to be quoted so often. Fat cells do not fill up with water.
Water retention takes place under the skin, between tissues, and greatly in your gut and muscle fibers (particularly after exercise). Fat cells, fatty tissues do not fill up with water after you lose weight because they are...fat. Fat = Oil. Oil + water = no no. Just think about trying to get your vinagrette to stay homogenous. Water would rather be just about anywhere else than in a fat cell.
Your fat cells love to fill up with fat, and though they will divide if they get too big, they will never go away once they are made. They can shrink however, as all of ours are doing.
