  • Feel Terrible Today Any Suggestions

    My kids have been sick and I know I'm battling whatever they've got. With my diet and exercise regimen I really don't need to be sick. Anyone have any suggestions on recipes for soup that dont have many carbs and is easy to make.

    I feel your pain. I brought home whatever I caught from working in the schools and can't seem to shake it.

    The best soup types I can think of are..

    cauliflower/cheese/bacon soups
    broccoli/cheese soups
    meatball soups
    Chicken soup
    veggy soups

    All are beef or chicken or veggie broth based. I use the low sodium broths either in the can or the carton. I don't have all my recipes with me at the moment, but there's some ideas to look for. I mainly use sour cream, cream cheese, and cheddar cheeses with the broths, and not much of the cheese at all to make a nice texture. You'd be surprised at the taste each one has. As for the veggie or meatball soups, I've found lots of recipes for those. Mainly I just make tiny meatballs, like bitesize, cook those up and add them to stock with veggies and diced tomatoes. I use tomatoes quite a bit in my veggie and meat soups.

    Oh, and I cheat with my chicken soup...I buy a precooked chicken or a can of chicken, cut up some veggies, and buy a can or box of low sodium broth. I saute the veggies in butter than add my chicken to saute that up some, and then add the broth. That's what I mean by cheating...I use box or can broth.

    Hope those give you some idea what to look for.

      I make chicken broth with induction friendly vegies all the time. Also, you can take chicken stock and make egg drop soup. Just get the broth real hot and drizzle in a beaten egg or two along with some green onions.
      Another on is a variation on Italian wedding soup. Equal parts spinach, eggs and parmesan cheese, mix em all together and put in hot broth.

        thanks for that one Bren! Yummmmmmmmmmmm O! i LOVE Italian Wedding Soup! i made some Chicken Soup the other day with Broccoli & Cauliflower and Mushrooms and my DH & Grandbabies LOVED it! i was suprised because none of them like Veggies at all... but they ate it up and asked for it again!

          Yes - soups are a great way of sneaking some more veggies in!!

            I ended up taking four chicken thighs out of the freezer and boiling the heck out of them. adding maybe 4-5 tbs. of dried minced onion, spinach, and broccoli and beef bullion. It turned out pretty good than when I had all I wanted I added noodles into it for the kids. It doesn't sound like much but it was pretty good.

              I take minced chicken and mix in some chopped parsley and grated parmesan cheese and make teeny little meat balls and pop them into boiling homemade chicken broth -- very yummy
