i was talking with a co-worker yesterday (who looks Wonderful...!) and she told me she has been eating Low Carb for Years... she told me that when she introduced those 1 Minute Muffins to her diet they made her GAIN weight, so she had to cut them out of her diet completely... If she has a food intolerance/allergy to flax, then yes it could make her gain. Probably not FAT, but certainly water. I have an intolerance to wheat...when I eat it, I can easily put on 5 lbs over the next 2-3 days after eating it. It comes right back off when I take wheat back out of my diet.

That's the beauty of Atkins. We add foods back SLOWLY, one at a time, so that we can figure out which foods WE as individuals can tolerate. Your friend can't tolerate flax. I can't tolerate wheat. You might be able to tolerate both, but maybe not tolerate something as simple as eggplant or peanuts, etc.

Yeah did you read my post below? Apparently I can't talerate flax either. But you need to test it with your own body. Some folks can have one every day from what I've read here and don't have an issue.

It sucks, but is true of many Atkins friendly foods. Forever, I will not be able to add any grain, including flax, no nuts and no peanut butter, without big cravings and weight gain. I also have found out I'm intolerant of most dairy. This is why you need to move up the ladder very carefully, and allow plenty of time between additions. I have found I can eat cheese, if I only eat it maybe once or twice a week, and not much at a time--about one ounce. Any more and my tummy gets bloated and painful. Hard lessons to learn, but very important for our health.

I ate them last time I was on Atkins, and they stalled me, mostly because I couldn't limit myself to just one. I think everyone is different in terms of what will cause a stall, though.
