  • Made My 1st Quiche!

    i am sooooo tired of Just Eggs, so i finally made my 1st Quiche using a Recipe off Linda's Low Carb Recipes...
    Mmm mmm mmmmmmm this is LOVELY...! and you can freeze it? i am taking Eliz's advice and making this on the weekends and slicing them up to keep for quick eats during the week! i just had to throw this news out there for you Newbies that are tired of Eggs... Try The Quiche!!! Its Great!!! i made mines with Eggs, Cheese, Sausage (or use Bacon or Ham) Spinach and Heavy Cream (salt & pepper to taste)... I give it 5 Stars! YUMMY YUMMY FOR MY TUMMY!

    Crustless quiche freezes very well. I have to do that so I don't eat too much at one time.

    I'm getting ready for the long time I won't be able to cook by making a quiche, salmon muffins and hearty breakfast casserole and freezing those in single servings. I am roasting and slicing a pork roast, grilling chicken thighs, hamburgers and boneless/skinless chicken breast that has been marinated in low carb Italian dressing and freezing them. I just put wax paper on cookie sheets and place the food close together, but not touching, then put them in the freezer. After they are frozen, I just drop them in zipper freezer bags. So easy.

    I love this 'diet'! :snicker:

        I'm having surgery on Oct. 17th and won't be able to sit or use my arms much for quite a while. My wonderful sister is coming down from Ohio to take care of me, but she can't cook worth a hoot and gags at the sight of fat or grease. Last year when I had even worse surgery, she even read most of the Atkins book, but still took my list to the store and came back with all kinds of stuff that I couldn't eat, but she thought would be better for me. She's always been super skinny and doesn't understand what I have to do to lose.

        Last time, it was an emergency admittance to the hospital and no time to get ready. This time I had about a three week notice. I'm a shopping, cooking, cleaning machine for the next week!

          oooooooooooooooh... surgery........... i thank the lord, have never had to be in that situation... well, hopefully it will be a 'good thing' for you and you will heal and get back up & around quickly! i know i will be here rooting for ya!

            I should be able to start exercising about 6 weeks after the surgery, so it will be worth it. I was losing at a good clip until several of my doctors forbid me to do any exercise since last February. My weight loss came to a screeching halt, no matter what I try. I did try my recumbent stepper for 5 minutes yesterday and for 7 minutes today, without any ill effects. Shhhh don't tell the docs!

                You just made one of my MOST Favorite dish for hurry up days during the week. Planning ahead and focusing on keeping track...I give you two thumbs up too! although I don't have those fancy little icons...just pretend I do.
