  • Legal Peanut Butter Cookies???

    I just created this recipe for glueten free, sugar free peanut butter cookies and I'm pretty sure its legal. They're in the oven now. Can't wait to see how they turn out. What do You All think???

    1c. creamy peanut butter
    1 c. splenda
    1 egg (lightly beaten, like me!)
    1tsp baking soda
    1/2 tsp vanilla.

    mix all ingredients and bake on 350 degrees for 15-16 min.

      They were really good. I almost thought the peanut butter would melt and I would have a mess but they raised and tasted good. I think though that the next time I make them it will have less splenda in it. maybe by half.

          I honestly have no clue. I guess it could be figured out by figuring out how many table spoons there are in a cup and figuring that way. But I'm not sure. But like I said I think the cookies are legal based on the ingredients but I'm not sure of a serving size. My guess would only be one cookie.

            there is a cookie recipe here for those, I believe it is very similiar. I made them along time ago and they were excellent, but I had a hard time with not eating too many!

            You could find the carb count by loading it into Fitday and divide out by how many cookies you have.

              If you made a dozen cookies with that recipe .. i'd estimate about 4 carbs per cookie ...


              Peanutbutter
              16 tablespoons in a cup x 2 carbs per tablespoon = 32carbs

              Splenda
              16 tablespoons per cup x 1 carb per tablespoon = 16 carbs

              48carbs / 12 cookies = 4 carbs per cookie


              Just my guess????

                wow, you guys are good! I didn't even know about that website. I've heard it mentioned but never been on it. I'll have to check it out tomorrow. I need sleep now. talk to you all tomorrow!

                    Hi Shari - I made a similar recipe but added some ground almond meal to stop them being so crumbly.( search donnas nutty cookies) I worked mine out as about 4 carbs each too! sound yummy huh?
                    I amek them for my dad who is diabetic. If you whip some cream and sandwich them together then freeze them they make a sort of icecream cookie sandwich!
