  • Shopping Bummer Today

Well I went out - I needed/wanted some low carb baking mix (like CarbQuick) for a few recipes I wanted to try out. The store I used to get it from didn't have any and neither did 2 other places.

Funny how one minute something can be at the top of everyone's shopping list and the next minute gone from the shelves!

I so didn't want to have to shop online for the mix but oh well.

Yeah, I know what you mean. When I did Atkins a few years ago, low carb products were everywhere. Now they've almost disappeared. About the only low carb product I used was the salad dressing cause it was sugar free. Now I can't find it anywhere.

I had to shop online.... and see that can get more dangerous because of the volume of choices. It was just a real bummer not to find even a simple baking mix in the store which was all I wanted! Now - I picked up some vanilla syrup, baking mix (2 types) and some muffin mixes to try out (I'm craving muffins) after I get down about 20 pounds.

Depending on what phase of Atkins you are currently on the mixes might not be 'lega' so check ingredients to make sure they are all allowed. So if the mix has soya flour in it then not till the legume rung/level of OWL etc

I actually plan on using the mix for a rub - it makes a great base for the herbs and on the rotiserrie it causes a great crust to form sealing in the juices. A chef friend taught me that but he uses whole wheat flour which is to die for also.

Somethings though I want to try out with my husband. I remember the 1st time we ever did Atkins (when the name was not recognized by anyone) and we got a bread machine mix. It smelled SOOOOOO good we were both all excited and then tasted it and it was AWFUL! We still laugh about it today.
