Ok - I am wondering - and this is just a pondering question. I am planning on trying my hand at goat cheese next year (we are getting the baby goats from a friend who is boarding her dairy goats with us now)
There aren't a bunch of ingredients in cheese yet it has 1 carb and the raw milk has 10.
So just out of curiosity - what would kill the carbs?

I never was good in the chemistry department! I won't be getting milk until December - and then I'll be able to play with it some for cheese - but my main interest will be selling it raw and also making soap.
