Odd Question.. Milk to Cheese

  • Odd Question.. Milk to Cheese

    Ok - I am wondering - and this is just a pondering question. I am planning on trying my hand at goat cheese next year (we are getting the baby goats from a friend who is boarding her dairy goats with us now)

    There aren't a bunch of ingredients in cheese yet it has 1 carb and the raw milk has 10.

    So just out of curiosity - what would kill the carbs?

    Milk is made up of fats, protein and carb (lactose). Cheese is a way of preserving the milk. During the cheese making process, water, most of the lactose and some of the protein is removed, leaving most of the fat and the remaining protein and a little carb.

      By the way, lovvvvvvvvvvvvvvvvvvvve fresh goat's milk and fresh goat's milk cheese. I thought it was foul until I visited my aunt who had goats and she used their milk for basically everything (on cereal, in lasagna - I mean everything!). It's creamier than cow's milk, so should be just right for Atkins.

        Thank you I never was good in the chemistry department! I won't be getting milk until December - and then I'll be able to play with it some for cheese - but my main interest will be selling it raw and also making soap.
