It never ceases to amaze me of how easy and how effective this ***diet*** is!!
I have since re-gained a bit of weight, but that is soon to be coming off again!

Speaking of pumpkin, I've been seeing plenty of pie pumpkins for sale at supermarkets for sale. Stock up on them because if you put them in a cool dry place, they can last for a few months and you can use them for pumpkin fries, pumpkin hashbrowns, pumpkin homefries, pumpkin chips/crisps.~Megs~

After reading this thread, I thought I would look up some pumpkin receipes - I found one that sounds YUM- I am assuming all would be OK with this one, can't find nutritional info (guess I could throw it in Fitday) Any thoughts would be appreciated!
Pumpkin Cassarole
14 oz pumpkin puree fresh or canned may be used.
3/4 cup ground almonds
1 2/3 cup grated Parmesan cheese 6 eggs
2 oz or 4 tbls softened butter
salt and white pepper Combine 6 tbls of ground almonds and about 2 tbls. butter into the pumpkin puree. Beat Eggs and mix them with 2/3 Parmesan cheese. Gradually add the pumkin mixture and combine all the ingredients. Grease a large baking dish with butter or cooking spray. Pour the pumpkin-egg mixture into the dish, sprinkle with the remaining ground almonds and Parmesan cheese. Dot top with remaining butter. Bake in the preheated oven until it has set- about 30 minutes.

That's okay for OWL, because it uses almonds.
Pumpkin fries: peel and seed the pumpkin, then slice them into fries shapes. Then fry them like fries. They don't get crispy like potato fries, but more like sweet potato fries.
Pumpkin homefries: peel and see the pumpkin, then slice into homefries shapes. Cook them like you would homefries with onion.
Pumpkin hashbrowns: you get the idea.
The browner the pumpkin gets as you cook them the sweeter they become.

And of course, for OWL, save the pumpkin seeds and roast them in the oven for a nice treat.

I've done something similar to this one, but I didn't bake it with maple syrup. To get the maple flavor, I mixed some maple extract with softened butter, then I brushed it on the cooked, hot pumpkin. http://www.relishmag.com/recipes/vie...in-wedges.html~Megs~

I'm not a fan of sweet pumpkin recipes like pumpkin pie, etc. But I like pumpkin more as a side dish or something savory like soup.~Megs~
